Making a gift for a friends party and what else could I do than a traditional moulder pigs head and ox tongue .This is called collared head and it’s around since early medieval times in Ireland .
It was a great tradition in Mary’s home and we continue making this dish for all our family get together and summer or winter lunches.
We always serve it at home with a flat griddle cake and a chutney of sorts but usually beet root relish.
If you ever want a summer party platter made up I would include this striking mold as a centre piece .
Remember it’s Rose time and I can think of no other glass to have in your hand .
We have served it also at functions with a glass of Con Trass’s Tipperary cider .
Country choice is so well stocked with summer food and new wines that all I can say is come and see for yourself .New flowered and baskets on tne street today compliments of our Council and the place looks great.
