Our hake price just went down from €19 to €17.50, so what better way to celebrate than sharing a really good hake recipe? 🎉🐟Mediterranean Baked Hake TraybakeLooking for a healthy, tasty dinner idea? Try this super simple Mediterranean baked hake traybake – high in protein, low in fat, and full of colourful veggies.✅ Serves: 2
✅ Time: ~30 minutes
✅ Great for midweek dinners👉 You’ll need:2 hake fillets (120–150 g each)1 red pepper, sliced1 yellow/orange pepper, sliced1 small red onion, sliced1 courgette, sliced1 can chopped tomatoes (400 g)8–12 olives, halved2–3 garlic cloves, minced1 tbsp extra-virgin olive oil1 tsp dried Italian herbs or oreganoChilli flakes, salt, pepperLemon wedges and fresh parsley to finish👉 How to make it:
1️⃣ Heat oven to 180 °C (fan 160 °C).
2️⃣ In a baking dish, mix peppers, onion, courgette, garlic, olives, herbs, chilli, olive oil, salt and pepper.
3️⃣ Pour in chopped tomatoes, stir, and spread evenly.
4️⃣ Bake veggies for 10–12 minutes.
5️⃣ Season hake fillets and place them on top of the veg.
6️⃣ Bake another 12–15 minutes, until the fish is opaque and flakes easily.
