A date for the diary. We can't wait for Oakfield Park's Donegal Festival of Food this year again.

📅 May Bank Holiday Weekend: May 2nd, 3rd & 4th from 12–6pm.

Another Easter favourite. Donegal Rapeseed Oil is a must for the moistest carrot cake recipe 🥕

Ingredients:

250g plain flour
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
½ tsp nutmeg (optional)
200g brown sugar
3 eggs
180ml Donegal Rapeseed Oil
2 tsp vanilla extract
300g grated carrots
100g chopped walnuts (optional)
75g raisins (optional)

Cream Cheese Frosting:
200g cream cheese
100g butter (softened)
250g icing sugar
1 tsp vanilla

Method:
Preheat oven to 180°C and line a cake tin.
Mix dry ingredients: flour, baking powder, baking soda, spices.
In another bowl, whisk eggs + sugar until smooth.
Add rapeseed oil + vanilla and mix well.
Fold dry ingredients into wet mixture.
Stir in grated carrots (+ nuts/raisins if using).
Bake for 40–50 minutes until a skewer comes out clean.
Cool completely before frosting.

Frosting:
Beat everything together until smooth, then spread on top.

The Easter holidays are the perfect time for some baking 😍 And these chocolate brownies are delicious!

Ingredients:
- 140ml Donegal Rapeseed Oil
- 200g 70% plain dark chocolate
- 85g plain flour
- 1 tsp baking powder
- 225g caster sugar
- 1 tsp vanilla essence
- 2 large eggs, plus 1 large egg yolk, beaten together
- Handful of mini eggs, crushed
- 6 creme eggs, halved

Method:
- Heat the oven to 180C / Fan 160C / Gas Mark 4. Line a 20cm square baking tin with baking paper.
- Place the chocolate in a bowl over a pan of gently simmering water, stirring occasionally until it has all melted.
- Add the Donegal Rapeseed Oil and mix in well. Remove the bowl from the pan of water.
- Mix the flour, baking powder and sugar together and stir into the chocolate and oil mixture.
- Add the eggs and mix well before pouring into the baking tin.
- Cook the brownie for 20 - 25 minutes, depending on how squidgy you like them.
Take the brownie out of the oven 5 minutes before the cooking time and add your Easter chocolate to the top.
- Pop the brownie back in the oven for its final 5 minutes.
- Remove and leave it to cool in the tin. Once cooled, cut into 12 pieces and enjoy!
