Birthday treat to myself...how I make lobster rolls using the best atlantic lobsters landed here in West Cork. I use the shells to make a lobster mayo with a hint of spices and habanero chilli, and garnish with finely cut chives and Korean chilli flakes. Luxury eating, in the hand!

For many in West Cork, especially in hospitality, work is very seasonal. Summer mad busy, winter much quiter. So a nice dry day at this time of year is the perfect opportunity for a wee adventure seeing what people travel from all over the world come her for. This is Glengarriff Forest Park. A nature reserve with a 3.5km walking trail with a bit extra to get to Lady Bantry's Lookout and the lovely 360 views. Dog friendly too!

The beginning of our beef farm have been a big new year excitement. Finally found a winter shed....it took ages and at last got in the first Angus calves a couple of weeks back
