In 1994 we built our own facility. Gerald kept pushing, expanding again in 2004 and perfecting the dry-ageing process we still use today. All while Caroline was out on the road delivering meat and raising three kids β€” Diarmaid, Cathal and Eamonn.

Paddy set up the butcher shop on the farm in 1952 and the tradition has been carried on through the generations ever since. Eight generations of the Burns family farming the land here in north Sligo β€” and we're only getting started.
