In response to an increase in delivery and take home in 2021, we also introduced a range of dip pots as a solution for providing customers with sauces on-the-go. Horseradish doesn't always get the spotlight, but it's often the sauce doing the most work on a plate. Ours is smooth, creamy, and packs a real punch — built to hold its own on a carvery counter, a sandwich menu, finishing a piece of fish, or combined with other sauces to create new flavours.

In our Grilled Mackerel, it's combined with crème fraîche and lime zest for a sharper, brighter finish — but it's just as much at home with roast beef or cold meats.

That versatility matters. One great sauce can work across multiple dishes. Quality, consistency and plenty of ways to put it to work!

At the Big Grill, Nick spoke with Jeanette, co-owner of Dirty Souls, to talk all things BBQ.

The one that stood out: a traditional Texas-style brisket, seasoned with nothing but kosher salt and black pepper, smoked at 350°F rather than the usual low-and-slow, cutting cook time from 14 hours to 6-8, without losing quality.

Proof that sometimes the biggest improvement isn't a new ingredient it's rethinking the method.

Smoked low and slow, then pulled and tossed through our Apple & Chilli BBQ Sauce before it goes into the brioche. The sauce brings the sweetness and the kick in one step — no separate glaze or marinade to prep.

A strong candidate for a BBQ or specials board, with minimal extra work for maximum flavour payoff.
