As summer settles in, we're making room for some new flavours.
Time to move away from the orchard and to take you down to the strawberry fields 🍓
As much as Irish apples are available all year, they are at their best, just like any other fruit, when freshly picked.
Introducing our mint & strawberry pastries. This is not just any croissant pastries. We go one step further, putting more thoughts into it to get more depth. This is a dough made with mint tea and garden mint infused butter. It's not just the garnish that gives you flavour, it's all the pastry.
Remember those offcut from our strawberry tart that we turn into a juice ? Well, we then turn it into a "curd" for that pastry # no waste.

. It's pain au (singular) raisins (plural) because we only use one type of raisins, but there's plenty of them. It's pain au (singular) chocolat (singular) because, even though there's 3 sticks of chocolate, it's still the same chocolate 🤯 . Now I'll just wait to be corrected as grammar is a French national sport 😁

The key to a good pain au raisins is to soaked the raisins. Typically soaked in pure rum, we soak ours in Rooibos tea for a different flavour profile. We also make a vanilla intense crème pâtissière to boost the taste.

Bank holiday weekend vibes

With happening over the weekend and the sun being out, isn't this the kind of dessert you're looking for? A floral and fresh display. Seabuckthorn, guava, elderflower, cherry, and coconut are some of the flavours you can find over the weekend.
This time of the year is really where we can start to play with flavour pairing as we move away from "storage fruit" to freshly picked and ready to eat.
The herbs and flowers in our garden will soon come into play to enhance those fresh fruits.
Summer here we come ☀️

Now pouring ☕️

On our last trip to South Africa last year, we had the chance to visit in Franschoek, and what an experience it was.
After quite a journey, the beans are in the hopper, ready to be ground. Currently, it's a special blend we have as it's made from Robusta beans instead of the more common Arabica. Following the recent storm in South Africa, it's even more special to be able to support and shine a light on their coffee.

What’s a Bunny Chow? 🇿🇦🥖

It is one of South Africa’s most iconic street foods. A hollowed-out loaf of bread filled with rich, flavour-packed curry, originally created in Durban and made to be eaten with your hands. Messy, comforting, and seriously satisfying.

Our Bunny Chow is made the authentic way, right here in Thomastown 🇮🇪 bringing the taste of South African street food culture to Kilkenny.

No cutlery needed. Just good bread, bold curry, and plenty of flavour.

This is the vegetarian version, but not to worry, we also have the chicken and beef version 😉

Back open tomorrow (21st of may) after a "long weekend "
After an epic weekend, with a fair bit of travelling, those extra days of rest were needed. As we're always planning something, it wasn't fully off, but we still managed to get some rest 😆. See you from 9am.

📸 Romany cream : a classic South African cookie made of a chocolate buttercream sandwiched between a coconut and chocolate biscuit. Because we can't import the original, we had to make our own 👌
