"Brewing the Past in the Present"
This clip is from the brewday, was a discussion with on how using a Quern to grind the heritage malt will affect the filtration and flavour for this recreation of a 16th century recipe from Dublin Castle.
will give a talk, 7pm on Saturday 21st Feb to reflect on the experience of recreating this 16th century beer in a farmhouse brewery using Irish grown heritage grain and hops, malted on site.
The aim is to explore what the process reveals about flavour, craft skill, sustainability and how historical research and in situ preservation of genetic material can continue to inform brewing in present.
The session will conclude with a guided tasting that allows audiences to connect to history and this research findings.
