We’re proud to introduce Di**le Distillery’s 11 Year Old Single Cask, matured exclusively in an Oloroso Sherry Cask.

Hand-selected by our Head of Maturation, Paddy Foley, this single malt has spent eleven years quietly maturing in our cask warehouse, developing rich notes of dried fruit, toasted nuts and oak spice.

As with every single cask, no two are ever the same. Each bottle is individually numbered and presented in a bespoke label and presentation box, making this a truly unique piece of Di**le Distillery's history.

Delighted that our Wayward Smoky Gin has been awarded Bronze at the Blas na hÉireann / The Irish Food Awards 2026.

Launched in 2025, Wayward Smoky Gin is our original take on an old spirit. This is a sipping Gin that we’ve finished in a Peated Wh***ey cask to give a very subtle smoky note. Best sipped chilled and fantastic in cocktails. We always like pushing the boundaries and love applying our blending skills to different spirits.

The Peat acts (like salt on your food) to highlight the other flavours – in this case it really elevates and picks out the Juniper and Cardamom notes of the Gin. The smoke is very subtle and only appears at the end as a lingering aftertaste.

That it's a truly unique taste and not for everyone, which makes the judges’ award especially welcome.

How to drink:
- We find it’s best sipped neat, chilled straight from the fridge.
- We prefer to add only a small (equal) amount of Soda water or Tonic, otherwise the smoky element gets drowned out.
- Our fans say it's superb in a Martini (and a Dirty Martini), a Red Snapper (the Gin version of a Bloody Mary) and a Smoky Paloma.

Thirteen years in the making and drawn from some of our earliest stocks laid down at Di**le Distillery, this is a significant release in our story. With just 1,585 bottles produced worldwide it represents a rare opportunity to experience Di**le Distillery wh***ey at an age and maturity never released before.

Created by our Head of Maturation, Paddy Foley, this wh***ey has been patiently matured in Bourbon casks before receiving an extended 18-month finish in Madeira Malvasia casks.
