Really tasty! I never do blue cheese with wors and not sure why as it works a treat!

Nduja tenderloin kebab cooked over olive wood.

Blitzed nduja, onion, garlic, lemon and olive oil. Pork coated and left overnight before being skewered with onion and peppers. Cooked quickly over very hot olive wood embers.

Lamb Shank tagine, one of my all time favorite dishes. Comfort of a winter dish but vibrancy of a summer dish. Lamb Shanks, coated in tagine spice layered on onions and garlic. Topped with carrots, peppers, chili, garlic and more tagine spice and olive oil. Used a few preserved lemons, olives and cinnamon stick around the side. Coriander, chili and almonds flakes to garnish.

Turned out perfectly with flavors on point and lamb pulled right off the bone after a 3 hour cook.

Charcoal is Ironwood SheOak from burns perfect pace and added a few pieces of charcoal as it cooked

Easter pulled lamb shoulder. Went down a treat with the family. Home made rub, lemon, pepper, salt, sugar, Italian herbs, rosemary, paprika, cayenne.

Amazing lamb shoulder from which I had been keeping in the freezer specially.

Cooked for 8 hours at 275f until 203f internal.

Marinated Tandoori Wings, Cherry Crush, BBQ rub cooked on skewers.

Went down a treat! Love cooking the Salmon sides on the board Viking style.
