Make this & thank me later ☺️

3 x free range Irish chicken fillets ,
trimmed and diced up in to strips , in to a bowl

Mix four tablespoons of honey with four tablespoons of good soy sauce together

Pour over the raw chicken and add a decent sprinkle of sea salt ,mix thoroughly to marinade

Cover bowl with cling film and pop in the fridge over night , or two days is even better

Next day heat a frying pan with a glug of olive oil , you want searing heat , wok style fry the chicken for a few minutes either side .....until sticky and cooked through

unreal in pitta , salads , sandwiches , hot or cold

works just as well with sirloin steak prepped the same way

through siblings lives
with us abide
our parents pride

when a poloroid lens
of neighbour friends
watched us fall out
then made amends

where we knew a call
from the voice in hall
and playing ball
made us feel tall

when a kettle on
was laughters song
and Summer's long
fixed right from wrong

where music dwelled
then seemed to held
the tears that welled
our parts gelled

when seasons flight
like an endless might
days chased night
under street light

where a scence of calm
was a chair near Mam
and a hymn by Dad
could reverse the sad

when we once flew
then said goodbye to you
only then we knew
we are but passing through

we said so long
to the old abode
where life was learned
and now re told
