This International Chefs Day, we celebrate the passion and creativity of our culinary team! 👨‍🍳

Last month, our Executive Chef Ed Cooney travelled to Verona for the XXIV edition of the Tocati Festival. The Italian festival is held annually, and this year Ireland was the guest country of honour at the festival ☘️

brought Ireland’s food culture, traditions, and sense of place to an international audience. While Chef Ed Cooney prepared traditional Irish meals with all ingredients shipped to Verona especially for the occasion!

Together, they explored the connections between Ireland’s food, landscape, farming, fishing, and hospitality, demonstrating how ingredients and dishes can tell the story of a nation.

A little crunch, a little sweetness and a taste of childhood. 🍎🍂 Who remembers toffee apples being the highlight of Halloween?

Make your own with this traditional favourite! 🎃

You’ll need:
6 apples, 225g demerara sugar, 25g butter, 2 tbsp golden syrup, 110ml water and ½ tsp vinegar.

🍎 Wash and thoroughly dry your apples, then insert a lolly stick into each.

🥄 Dissolve the sugar in the water over a moderate heat. Stir in the vinegar, golden syrup and butter.

🔥 Bring to the boil without stirring until a little toffee dropped into cold water turns hard and brittle.

✨ Carefully dip and turn each apple in the toffee, then leave to set on a lightly oiled tray.

Hot toffee is one for the grown-ups…let it cool completely before enjoying!

Save this recipe for Halloween and choose Irish-grown apples where available. ☘️

🌟Women in Food Innovation | Changing the Face of Ireland’s Culinary Scene - The second of a two-part media series in Germany ☘️

We’re just leaving Munich 🇩🇪 where Good Food Ireland® had the pleasure of representing Ireland’s culinary tourism offering in partnership with Tourism Ireland, sharing our island’s food story with German journalists at a high profile media event.

Led by Margaret Jeffares, Farmer and Founder of Good Food Ireland®️, celebrating its 20th anniversary, the delegation brought together four inspiring women who are helping shape the future of Ireland’s food scene. Joining Margaret was Aoife Nic Giolla Coda of Galtee Honey Farm , Grainne Calvey of Achill Mountain Lamb and Sinead Gillard of Jinny's Bakery & Tearooms

Each has her own story to tell, united by a passion for Irish food, a connection to the land and a determination to bring the best of Ireland to a wider audience.

At Good Food Ireland®️, we believe our food is one of the most powerful ways to experience Ireland. By connecting our food and drink producers, farmers, chefs and hospitality businesses with visitors, we are helping shape the island of Ireland as a distinctive culinary tourism destination, one where authentic food experiences bring our people, places and culture to life.

In partnership with Tourism-Ireland we’re taking that story beyond our shores, inspiring international visitors to discover Ireland through its food and the remarkable people behind it.

Thank you to Katja Meinken-Wiedemann and team at Tourism Ireland in Germany. It’s a pleasure as always to work with you to champion the people, provenance and partnerships driving Ireland’s culinary tourism story forward.

#3. Regeneration doesn’t start and end on the farm.

Healthier soil is part of the story. So too are the livelihoods of producers, the sourcing decisions of chefs, the commitment of hospitality businesses and the choices we make as consumers.

A regenerative food system asks us to look at how these connections can help restore the land, strengthen communities and sustain the people who bring food to our tables.

Every link has a role. Every link has an opportunity to make a difference.

At Good Food Ireland®, we connect the people, places and produce behind Ireland’s food story. We believe these connections are essential to building a food future that gives back.

What could regeneration look like in your part of the food chain?

#2 🌟 EVERY FOOD CHOICE IS A VOTE FOR THE KIND OF FUTURE WE WANT TO SEE..

What we buy, where we eat and whose produce we choose all matter. These everyday decisions help shape what is valued, what is sustained and what is passed on to the next generation.

Choosing with purpose starts with asking questions. Where did this come from? Who produced it? Does the menu celebrate Irish ingredients?

At Good Food Ireland®, we connect the people, places and produce behind Ireland’s food story, helping you make informed choices and discover the businesses committed to it.

Because the future of food in Ireland deserves a place at every table.

Choose with knowledge. Choose with purpose. Choose good food.

👉 Save this as a reminder, and share it with someone who cares about where their food comes from.
