I was recently introduced to Tibra , a premium handcrafted arak inspired by centuries old Sephardic and Middle Eastern traditions. Unlike a lot of harsher araks, this one is incredibly smooth with rich notes of anise, licorice, and fig that give it a really distinct flavor profile.
The recipe is inspired by the teachings of Maimonides (Rambam). It’s produced in small batches using organic ingredients and traditional distillation methods, combining old world craftsmanship with a more modern premium feel.
This tasting event took place at Elul Winery in the Judean Hills and the winery itself was honestly fascinating. Everything there is fully organic and focused on natural winemaking, from the way the grapes are grown to the minimal intervention production process. The vineyards are located near ancient Tel Gezer, one of the oldest wine producing regions in Israel.
One of the most unique parts is that Elul prepares its wines according to standards connected to the times of Mashiach, with a focus on ritual purity and ancient Jewish agricultural practices. It’s not just a winery, the entire concept feels deeply connected to Jewish history, tradition, and the land of Israel itself.
Between the winery, the atmosphere, and the Tibra tasting, the whole night felt like a really special blend of ancient tradition and modern luxury. 🍸
