असली अवधी खाना कभी गैस पर नहीं पकाया जाता था।

सैकड़ों साल पहले लखनऊ की रसोइयों में न गैस थी… न इलेक्ट्रिक स्टोव। सब कुछ धीरे-धीरे लकड़ी की आग, सिगड़ी और कोयले के तंदूर पर पकाया जाता था।

यहीं से आती है अवधी खाने का गहरी सोंधी खुशबू और चूल्हे वाला असली स्वाद।

Rumi में यह सिलसिला आज भी कायम है।
हमारे किचेन में कबाब, रोटियां और क़ोरमे आज भी चूल्हे, कोयले की सिगड़ी और तंदूर पर ही बनाए जाते हैं।

इसीलिए Rumi का खाना सबसे अलग है…
क्योंकि यहाँ असली अवधी ज़ायका आज भी ज़िंदा है।
