Hagalakai Mirapudi with IHP Iyengars Turmeric & Chilli Powder

Ingredients
¼ cup oil
200 g hagalakai (bitter gourd), finely chopped
200 g potato, finely chopped
½ tsp IHP Iyengars Turmeric Powder
1 tsp IHP Iyengars Chilli Powder
¼ tsp hing (asafoetida)
Salt to taste

For the Seasoning
3 tsp oil
1 tsp mustard seeds
2 tsp urad dal
2 sprigs curry leaves

Method
Heat ¼ cup oil in a kadai.
Add the finely chopped hagalakai (bitter gourd) and sauté on a medium flame until it is half cooked.
Add the finely chopped potatoes and continue cooking until the potatoes are soft and fully cooked.

Add IHP Iyengars Turmeric Powder, hing, salt, and IHP Iyengars Chilli Powder.
Mix well and cook for another 2–3 minutes on a low flame so that the spices blend beautifully with the vegetables.

Prepare the Seasoning
Heat 3 teaspoons of oil in a small pan.
Add mustard seeds and allow them to splutter.
Add urad dal and fry until it turns golden brown.
Add the curry leaves and sauté for a few seconds until aromatic.
Pour the hot seasoning over the cooked vegetables and mix well.

Your delicious Hagalakai Mirapudi is now ready!

Serve hot with steamed rice.

Ingredients
• 1 cup oil
• 1 cup groundnuts
• ¼ cup fried gram (hurigadale)
• ¼ cup dry coconut slices
• ½ cup curry leaves
• 1 tsp mustard seeds
• ½ tsp hing (asafoetida)
• Salt to taste
• 2 tsp IHP Iyengars Rasam Powder
• 500 g kadle puri (mandakki)
Method
1. Heat the oil in a large kadai.
2. Fry the groundnuts until golden and crunchy.
3. Add the fried gram and roast for a minute.
4. Add the dry coconut slices and fry until lightly golden.
5. Add the curry leaves and fry until crisp.
6. Remove the roasted ingredients to a plate, leaving the oil in the kadai.
7. In the same oil, add the mustard seeds and let them splutter.
8. Add hing, salt, and IHP Iyengars Rasam Powder. Stir on a low flame for a few seconds until aromatic.
9. Add the kadle puri and gently toss until every grain is evenly coated with the seasoning.
10. Return the roasted groundnuts, fried gram, coconut slices, and crispy curry leaves to the kadai. Mix everything well until evenly combined.
11. Allow it to cool completely before serving or store it in an airtight container to retain its crispness.

Traditional Mango Thokku Recipe | Sweet, Spicy & Tangy Homemade Pickle 🌶️

Nothing captures the taste of summer quite like a jar of homemade Mango Thokku! Made with fresh raw mangoes, aromatic spices, jaggery, and the rich flavor of IHP Iyengars Chili Powder, this traditional South Indian condiment pairs perfectly with rice, dosa, chapati, curd rice, and more.

Ingredients
• 4 cups grated raw mango (preferably Omelette variety or any sour mango)
• ½ cup oil
• 1 tsp mustard seeds
• ½ tsp hing (asafoetida)
• ½ cup salt
• ½ cup IHP Iyengars Chili Powder
• ¼ cup roasted methi (fenugreek) powder
• ¼ cup roasted mustard powder
• 1 cup jaggery powder
• ½ tsp turmeric powder

Method
1. Heat ½ cup oil in a tava or heavy-bottomed pan.
2. Add mustard seeds and allow them to splutter.
3. Add hing and sauté briefly.
4. Add the grated raw mango and cook well until softened.
5. Add salt, IHP Iyengars Chili Powder, roasted methi powder, roasted mustard powder, and jaggery powder.
6. Add ½ tsp turmeric powder and mix thoroughly.
7. Cook on a low flame, stirring occasionally.
8. Continue cooking until the mixture thickens and starts releasing oil.
9. Switch off the flame and allow it to cool completely.
🥄 Your delicious Mango Thokku is now ready to serve!

Storage Tip
Store in a clean, dry, airtight container and refrigerate. If no water comes into contact with the pickle, it can be stored for up to one year.

A delicious Karnataka-style Capsicum Engai made with aromatic spices, roasted groundnuts, tamarind, and jaggery. This flavorful curry pairs perfectly with roti, chapati, and steamed rice.

Pre-Preparation
• Roast 4 tsp groundnuts until crisp. Coarsely grind and keep aside.
• Soak a small lemon-sized tamarind ball in water for 10 minutes. Extract the pulp and reserve the tamarind water.
Ingredients
• 4 tbsp oil
• 1 tsp mustard seeds
• 2 strands curry leaves
• 1 tbsp ginger-garlic paste
• 1 cup chopped onion
• 1 cup chopped tomato
• Salt to taste
• 250 g capsicum, chopped
• 1 tsp IHP Iyengars Turmeric Powder
• 2 tbsp IHP Iyengars Vangi Bath Masala
• 1 tsp IHP Iyengars Coriander Powder
• 1 tsp IHP Iyengars Jeera Powder
• ½ tsp IHP Iyengars Chilli Powder
• 3 tsp dry coconut powder
• 4 tsp roasted coarsely ground groundnuts
• Tamarind pulp and water (prepared earlier)
• ¼ cup jaggery powder
• Water as required
• Fresh coriander leaves, chopped
Method
1. Heat 4 tbsp oil in a tava or kadai.
2. Add mustard seeds and allow them to splutter.
3. Add curry leaves and ginger-garlic paste. Sauté for a minute.
4. Add chopped onions and fry until they become transparent.
5. Add chopped tomatoes and cook until soft.
6. Add salt to taste and mix well.
7. Add the chopped capsicum and cook for a few minutes.
8. Add IHP Iyengars Turmeric Powder, Vangi Bath Masala, Coriander Powder, Jeera Powder, and Chilli Powder.
9. Mix well and cook until the spices coat the capsicum evenly.
10. Add dry coconut powder and roasted groundnuts. Mix thoroughly.
11. Pour in the tamarind pulp and water.
12. Add jaggery powder and stir well.
13. Close the lid and cook for a few minutes.
14. Add water according to your preferred gravy consistency.
15. Mix well, cover, and cook for another few minutes until the capsicum is tender and the flavors are blended.
16. Garnish with freshly chopped coriander leaves and give it a final mix.
Serving Suggestion
Serve hot with:
• Roti
• Chapati
• Steamed Rice
