Esplanade

Esplanade is inspired by all things Calcutta... named after a quaint, historic part of a city that has been a melting pot of cultures for many centuries.
(1376)

It is believed that no other Asian city has inherited and retained a culinary legacy in as much measure as Calcutta has. From the Mughlai flavours in the courts of the Nawabs, to European cuisine brought on by the British Raj, to Chinese cooking in the bylanes of Tangra, this heritage city has embraced different styles of cooking over time in a way that one can trace these influences even in the traditional Bengali home today. So we at Esplanade invite you on a food trail to savour an experience called ‘Calcutta’.

Some dishes don’t just belong on a plate — they carry a piece of home ❤️

Ilish Macher Paturi is quintessential Bengali comfort: ilish coated in a fragrant mustard paste, finished with green chillies and wrapped in a banana leaf to steam. Locked in aroma, letting the richness of the ilish and the zing of mustard come together in every bite.

And that first moment when you unwrap the paturi? Pure Bengali nostalgia.

As part of the Ilish Festival at Esplanade, we’re bringing this beloved classic to your table — because for a Bengali, ilish is more than just fish. It’s celebration, memories and a taste of home. 🐟💛

In Bengali homes, Ilish is never merely a fish. It carries the memory of monsoon afternoons, rivers in rain, the aroma of mustard oil in the kitchen, and a table where steaming rice waits for that first piece of Ilish.

Tel Jhal is one of the most elemental ways of eating it — letting the richness of the fish, the pungency of mustard oil and the heat of chilli speak for themselves.

Simple. Fierce. Deeply Bengali.

As part of the Ilish menu at Esplanade, this is a dish that honours not just a recipe, but a culture where food is memory, season and emotion.
Ilish is nostalgia. Tel Jhal is home.
