Today I’m making a delicious spicy Raw Mango Chutney with traditional homemade flavors.
This chutney is tangy, spicy, and perfect with rice, dosa, chapati, and snacks.
Let’s get started!”
🥭 INGREDIENTS
“Here’s what we need:
4 raw mangoes
2 teaspoons cumin seeds
6 dry red chilies
2 teaspoons mustard seeds
1 teaspoon fenugreek seeds
Fresh curry leaves
2 tablespoons vinegar
8 garlic cloves crushed
2 teaspoons chili powder or as required
Half teaspoon turmeric powder
A pinch of hing
Salt to taste
And 1 cup sunflower oil.”
🍳 COOKING PROCESS
“First, heat 1 cup sunflower oil in a pan.
Add mustard seeds, cumin seeds, fenugreek seeds, and dry red chilies.
Now add curry leaves and crushed garlic.
Sauté everything until aromatic and cook for about 3 minutes until the garlic turns golden brown.
Next, take a mixing bowl and add grated raw mango.
Add turmeric powder, chili powder, vinegar, and salt.
Now pour the fried spices and hot oil mixture over the mango.
Mix everything really well so all the flavors combine perfectly.”
☀️ SUNLIGHT FERMENTATION
“Allow the chutney to cool completely.
Transfer it into a clean glass jar and keep it in sunlight for 3 days.
This helps develop the authentic pickle-style flavor.”
🍽️ FINAL OUTRO
“After 3 days, store it in the refrigerator and enjoy whenever you like!
