Smoked Sausage, Potato, and Green Bean Bake

Ingredients:

4-5 medium potatoes, peeled and boiled

1 package smoked sausage, sliced

2 cans (or 2 cups) green beans, drained and cooked

1 cup shredded cheese (cheddar or your favorite)

1/4 cup real bacon bits

1 stick butter, cut into pieces

Garlic and herb seasoning, to taste

Instructions:

Preheat Oven: Preheat your oven to 350°F (175°C).

Prepare Potatoes: Once the potatoes are boiled and tender, cut them into bite-sized pieces.

Cook Sausage and Green Beans: Boil the sliced smoked sausage in a pot for a few minutes. Drain the sausage and cooked green beans.

Assemble the Casserole: In a large baking pan, combine the potatoes, sausage, and green beans. Season with garlic and herb seasoning to taste. Sprinkle the bacon bits evenly over the top.

Add Butter and Cheese: Place the butter pieces evenly over the mixture. Sprinkle the shredded cheese on top.

Bake: Place the pan in the preheated oven and bake for 10 minutes, or until the cheese is melted and bubbly.

Serve: Serve warm and enjoy this comforting dish!

*Corned Beef Hash Recipe*
Makes 4 servings. Takes 25 minutes.

*Ingredients*
• 2 cups diced cooked corned beef
• 2 medium potatoes diced small
• 1 medium onion diced
• 2 cloves garlic minced if you like
• 3 tablespoons oil or butter
• 1/2 teaspoon salt
• 1/2 teaspoon black pepper
•1/2 teaspoon paprika
• 1 teaspoon Worcestershire sauce
• some chopped fresh parsley to finish.

*Method*
1. *Cook the potatoes first*: Dice them into 1cm cubes. Boil in salted water for 5 minutes until just tender, then drain and let them steam dry. This stops the hash from going mushy. Skip this if you’ve got leftover roast potatoes.
2. *Get your pan hot*: Use a big pan on medium-high heat. Add 2 tablespoons oil or butter.
3. *Crisp the potatoes*: Tip them in and spread out. Leave them alone for 3-4 minutes so they get golden underneath. Flip and do another 3 minutes. Scoop them out.
4. *Soften the onion*: Add the last tablespoon of oil if the pan’s dry. Cook the diced onion 3 minutes until soft. Add garlic for the last 30 seconds.
5. *Brown the beef*: Add your diced corned beef and break it up. Fry 2 minutes until it starts catching some color.
6. *Bring it together*: Potatoes back in. Add salt, pepper, paprika, and Worcestershire sauce. Stir gently.
7. *Make it crispy*: Press the whole mix down flat with your spatula. Let it sit 3-4 minutes without touching so the bottom gets a crust. Flip in chunks and crisp the other side 2-3 minutes. Don’t over-stir or you’ll lose the crunch.
8. *Finish and serve*: Taste it. Add more pepper or salt if needed. Scatter parsley on top. Done.

*How to eat it*: It’s a classic breakfast *side dish*. Slide a fried or poached egg on top and the yolk makes a sauce. Goes with toast, baked beans, or grilled tomato. You can eat it as a meal, but traditionally it sits next to eggs.

*Canned corned beef tip*: Dice it cold from the tin and fry it hard first so the edges get crispy. Use less oil because it’s fatty.

Potato Chips

Ingredients

• 2 large russet potatoes
• 2–3 cups vegetable oil, for frying
• 1 tsp salt
• ½ tsp black pepper (optional)
• ½ tsp paprika or chili powder (optional)
• ½ tsp garlic powder (optional)

Instructions

1. Wash and peel the potatoes if desired. Slice them very thinly (1–2 mm) using a mandoline or sharp knife.
2. Soak the potato slices in cold water for 30 minutes to remove excess starch.
3. Drain and pat the potato slices completely dry with paper towels.
4. Heat the vegetable oil to 175°C (350°F).
5. Fry the potato slices in small batches for 2–4 minutes, turning occasionally, until golden brown and crispy.
6. Transfer the chips to a paper towel-lined plate to drain excess oil.
7. Season immediately with salt, black pepper, paprika, or garlic powder while still hot.
8. Let the chips cool completely before serving or storing in an airtight container.
