Ingredients:
3 tbsp oil
1 tsp cumin seeds
1 onion (diced)
8 garlic cloves (3 thinly sliced, 5 finely chopped)
3 medium potatoes (skin peeled, and cut into small-medium sized cubes)
1/2 cup tinned chopped tomatoes
1 tbsp coriander powder
1/2–2 tsp red chili powder
1/4–1/2 tsp turmeric powder
salt (to taste)
500 spinach leaves
1/2 lemon (juiced)

Instructions:
1.Heat oil in a large pan over low-medium heat.
2.Add the cumin seeds and add the diced onions. Turn the heat up and while consistently stirring, cook the onions until slightly golden.
3. Now add in both sliced garlic and chopped garlic. Cook for a few seconds.
4. Add chopped tomatoes, chili powder, coriander powder, turmeric powder and salt. Mix, and cook for 2-3 minutes.
5.Mix in the chopped potatoes, and then add spinach over the potatoes. 6.Don't mix! Cover the pan with the lid, and cook for 5 minutes over medium-high heat.
7.Now mix and bring to a simmer. Cover the pan with the lid and cook for around 10 minutes. Mixing occasionally. You should have enough liquid in the pan from the spinach, but if you need more add a little water. 8.Once the potatoes are cooked, turn up the heat to cook off any of the excess moisture. Mix in lemon juice. Serve warm!

Rice Pudding/ Chawal ki kheer

Ingredients:
----------------
Milk- 1ltr
Rice- 1/4cup
Sugar- 1.5cups
Ghee- 3tbsp
Nuts of your choice - 1cup

Recipe:
----------
1. In a heavy bottomed cooking pot, add milk and let it boil.
2. Add grinded rice into it and cook until the rice becomes soft
3. Add sugar and mix well.
4. In a pan add ghee. Once heated fry cashews, soaked and peeled almonds and fry for 30 seconds
5. Now add the ghee to the kheer and mix well
6. You can add saffron to the kheer

Note: After adding rice to milk stir the kheer continuously else the rice will get burnt at the bottom of the pan.
