Ingredients:
• 200g Udon Noodles
• 3 tbsp Daily Dozen Peanut Butter
• 1 tbsp Chili Crisp
• 1 tsp Chili Flakes (optional)
• 3 Garlic Cloves, finely minced
• 2 Green Onions, sliced
• 1 tbsp Sesame Seeds
• 1 tbsp Dark Soy Sauce
• 1 tbsp Rice Vinegar
• 3 tbsp Hot Neutral Oil (peanut oil works best; alternatively use rice bran or sunflower oil)
• 2 - 3 tbsp Reserved Noodle Water
Method:
1. Cook the udon noodles according to package instructions. Reserve a few tablespoons of noodle water before draining.
2. In a large bowl, combine Daily Dozen Peanut Butter, chili crisp, chili flakes, garlic, green onions, sesame seeds, dark soy sauce, and rice vinegar.
3. Heat the peanut oil until hot and carefully pour it over the mixture. Stir well to create a smooth, fragrant sauce.
4. Add the cooked udon noodles and toss until fully coated. Add reserved noodle water as needed for a silky texture.
5. Garnish with extra green onions, sesame seeds, and a little more chili crisp. Serve immediately.
