Craving a rich and refreshing dessert without using custard or heavy cream? This homemade strawberry fruit cream is thick, naturally sweet, and packed with nuts and fruits. It is a wholesome dessert you can easily prepare at home using simple ingredients and zero preservatives.

Ingredients
• 200–300 ml hot milk
• 30–40 g makhana (fox nuts)
• 30–40 g cashew and almonds
• Fruits of your choice: apple, strawberries, black or green grapes, pomegranate
• 10–12 strawberries (for blending)
• Honey or sugar as per taste

Recipe
1. Take hot milk in a bowl and add makhana, cashews, and almonds.
2. Let them soak in the hot milk for 25–30 minutes until soft.
3. Add soaked mixture to a blender. Add honey or sugar and 10–12 strawberries.
4. Churn well until it becomes a thick, smooth, creamy blend.
5. Pour the prepared cream into serving bowls.
6. Add chopped fruits like apple, strawberries, grapes, and pomegranate on top.
7. Refrigerate for 1–2 hours for a chilled, rich texture.

If you love homemade snacks that are light yet satisfying, palak momos are a perfect choice. Packed with the goodness of spinach and fresh vegetables, these steamed delights are healthy, flavorful, and perfect for clean eating days.

Ingredients:
• Fresh spinach leaves (blanched and pureed)
• Whole wheat flour or momo wrappers
• Finely chopped cabbage
• Grated carrot
• Capsicum (finely chopped)
• Garlic and ginger (minced)
• Salt and black pepper
• Soy sauce
• Chilli sauce (optional)
• Olive oil or sesame oil

Recipe:
1. Knead whole wheat flour with spinach puree and a pinch of salt to form a soft green dough. Rest for 15 minutes.
2. Heat little oil in a pan. Sauté garlic and ginger until aromatic.
3. Add chopped cabbage, carrot, and capsicum. Stir-fry on high flame for 2–3 minutes.
4. Add salt, black pepper, soy sauce, and chilli sauce. Mix well and let the filling cool.
5. Roll small portions of dough into thin circles.
6. Place a spoon of filling in the center and shape into momos. Seal properly.
7. Steam the momos for 8–10 minutes until cooked and glossy.
8. Serve hot with your favorite dip and enjoy healthy palak momos at home.

This frozen orange posset served in natural orange shells is refreshing, elegant, and surprisingly simple. Creamy citrus filling with a hint of vanilla and zest makes it perfect for dinners, parties, or a quick indulgent treat at home.

Ingredients
• 4 fresh oranges (for vessels + juice)
• 1 cup fresh cream
• ½ cup Milkmaid (condensed milk)
• ½ tsp vanilla essence
• 1 tsp orange zest
• 1 pinch salt
• Few drops orange food colour (optional)
• 1 tbsp lemon juice
• Small orange pieces for topping

Recipe
1. Cut oranges from the center and gently remove pulp to create deep vessels.
2. Strain and squeeze the pulp to extract fresh orange juice.
3. In a non-stick pan, add cream, Milkmaid, vanilla essence, orange zest, salt, and orange colour.
4. Whisk well and cook on low flame for 8–10 minutes, stirring continuously.
5. Turn off flame and let mixture become lukewarm.
6. Add orange juice and lemon juice. Whisk well and cook again on low flame for 1–2 minutes.
7. Strain the mixture for a smooth texture.
8. Let it cool slightly, then pour into prepared orange vessels.
9. Add tiny orange pieces into each vessel.
10. Freeze for 5–6 hours until set. Serve chilled and enjoy.

Bihar Style Homemade Litti Chokha

Litti Chokha is more than a meal in Bihar. It is a celebration of simplicity, earthy flavours, and slow cooking. Traditionally roasted over coal or cow-dung cakes, this rustic dish brings together sattu-filled litti with smoky mashed vegetables, making it wholesome, nourishing, and deeply satisfying.

Ingredients

For Litti

• Whole wheat flour – 2 cups
• Sattu (roasted gram flour) – 1 cup
• Mustard oil – 3 tablespoons
• Garlic – 5 to 6 cloves, finely chopped
• Green chilli – 1, finely chopped
• Ginger – 1 teaspoon, grated
• Onion – 1 small, finely chopped
• Lemon juice – 1 tablespoon
• Ajwain – ½ teaspoon
• Kalonji – ½ teaspoon
• Fresh coriander – 2 tablespoons, chopped
• Salt – to taste
• Water – as needed

For Chokha

• Baingan (brinjal) – 1 large
• Tomatoes – 2 medium
• Potatoes – 2 medium
• Garlic – 5 to 6 cloves
• Green chilli – 1
• Mustard oil – 2 tablespoons
• Onion – 1 small, finely chopped
• Fresh coriander – 2 tablespoons, chopped
• Salt – to taste

Recipe

Preparing the Litti

In a bowl, mix whole wheat flour, a pinch of salt, and 1 tablespoon mustard oil. Add water gradually and knead into a firm dough. Cover and rest for 20 minutes.

In another bowl, combine sattu, garlic, ginger, green chilli, onion, ajwain, kalonji, lemon juice, coriander, salt, and 2 tablespoons mustard oil. Mix well to form a crumbly stuffing.

Divide the dough into equal portions. Flatten each, fill with sattu mixture, seal properly, and shape into round balls.

Roast the litti on a tandoor, charcoal, or gas flame on low heat, turning regularly until cooked through and evenly browned. Alternatively, bake at 180°C for 35 to 40 minutes, flipping halfway. Dip hot litti in mustard oil before serving.

Preparing the Chokha

Roast brinjal, tomatoes, potatoes, and garlic directly on flame until the skin is charred and vegetables are soft. Peel once cooled.

Mash everything together with chopped onion, green chilli, salt, mustard oil, and coriander. Mix gently. Taste and adjust seasoning.

Serve hot litti with fresh chokha and extra mustard oil on the side.

Ingredients
• White bread slices – full loaf
• Milk – half bowl
• Powdered sugar – 3 to 4 spoons
• Baking powder – 1/4 spoon
• Dairy milk or dark chocolate – 1 large bar
• Water – for double boiler
• Rainbow sprinkles – for decoration
• Oil – for frying

Recipe
• Remove the sides of the bread slices and cut them into small pieces
• Add milk, powdered sugar, and baking powder.
• Knead well to make a soft dough.
• Take small portions of the dough and shape into slightly thick flat tikkis.
• Make a hole in the center to form a donut shape.
• Heat oil and fry the donuts on both sides until golden brown.
• Cut the chocolate into small pieces and place them in a glass bowl.
• Heat water in a pan and place the bowl over the hot water.
• Stir continuously until the chocolate melts smoothly.
• Dip one side of each donut into the melted chocolate.
• Decorate with rainbow sprinkles and serve fresh.

• ¾ cup gram flour/besan
• ¼ cup ghee

• ¼ teaspoon salt

• 3–4 tablespoons milk (as needed for dough)
