Chicken Tikka Masala Recipe
Ingredients
For the Chicken Marinade:
500g (1 lb) boneless chicken thighs or breasts, cut into bite-sized pieces
1 cup plain yogurt
2 tablespoons lemon juice
1 tablespoon ginger-garlic paste
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon garam masala
1 teaspoon turmeric powder
1 teaspoon chili powder (adjust for heat)
Salt, to taste
For the Masala Sauce:
2 tablespoons vegetable oil or ghee
1 medium onion, finely chopped
2 garlic cloves, minced
1-inch piece of ginger, minced
2 large tomatoes, pureed
1 teaspoon ground cumin
1 teaspoon coriander powder
1 teaspoon turmeric powder
1 teaspoon paprika
1 teaspoon garam masala
1 teaspoon chili powder (optional, for extra heat)
1 cup heavy cream or coconut milk
1/2 cup water (or as needed for consistency)
Salt, to taste
For Garnish:
Fresh cilantro leaves, chopped
A few whole peppercorns (optional)
Instructions
Step 1: Marinate the Chicken
In a large bowl, combine yogurt, lemon juice, ginger-garlic paste, and all the spices listed for the marinade. Mix well.
Add the chicken pieces, ensuring they are well coated in the marinade. Cover and refrigerate for at least 1 hour (preferably overnight).
Step 2: Cook the Chicken
Heat a skillet or grill pan over medium heat. Add a little oil to prevent sticking.
Cook the marinated chicken pieces in batches until slightly charred and cooked through (about 6-8 minutes). Set aside.
Step 3: Prepare the Masala Sauce
Heat oil or ghee in a large pan over medium heat. Add chopped onions and sauté until golden brown.
Add minced garlic and ginger, cooking until fragrant (about 1 minute).
Stir in the pureed tomatoes and cook for 8-10 minutes, stirring occasionally, until the oil begins to separate.
Add cumin, coriander powder, turmeric, paprika, garam masala, and chili powder. Cook for another minute.
Pour in the cream and water, mixing well. Simmer for 5 minutes.
Step 4: Combine Chicken and Sauce
Add the cooked chicken to the sauce and simmer for 10 minutes, allowing the flavors to meld. Adjust the consistency with water if needed.
Taste and add salt as necessary.
Step 5: Garnish and Serve
Garnish with chopped cilantro and optional whole peppercorns.
Serve hot with naan, steamed rice, or paratha.
