Meet Chef Crescentia Scolt Fernandes , the soul behind some of Goa’s most cherished flavors. From her home kitchen to the legendary restaurant Bernardo’s, she has turned family recipes into timeless culinary experiences.
Her forthcoming cookbook brings together the food heritage of two communities that share many similarities – Goan/Konkani and the lesser-known Indo Portuguese people of the Vypeen island in Cochin and stories simmered in memory, love, and spice.

The word ‘Bebinca’ conjures up the delectable layered Goan confection called the Queen of Goan Desserts. However, there are several versions of Bebinca made differently and spelt differently, in several other countries like Sri Lanka, Philippines, Macão, Malaysia, Bangladesh etc.

This is the scarcely known but delicious Bebinca made by the Anglo Indian families with Portuguese antecedents in the island of Vypeen, in Kerala. The ingredients are rice flour, sugar, butter, eggs, coconut milk and - the main ingredient - the Kerala banana (nendrapazham)!!
My grandmother used to bake it in a mud chatty with burning coconut husks, similar to the traditional way the Goan bebinca is made. I’ve tried it several times and was not really too happy, but today I nailed it - I hope I’ve done my grandmother proud ! You will be hearing more about this soon 😉
