A treasured recipe from my mother’s kitchen in a tiny hamlet of Naini, Allahabad, this achaar brings together the bold flavour and heat of long-cut green chillies, blended with **rai (black mustard seeds)** and **peeli sarson (yellow mustard seeds)** and naturally fermented through the traditional lacto-fermentation process.
