how to make delicious Shahee Paneer?
To make delicious Shahi Paneer, follow this easy recipe:
Ingredients:
250g paneer (Indian cottage cheese), cubed
2 tablespoons ghee or vegetable oil
1 large onion, finely chopped
2-3 garlic cloves, minced
1-inch piece of ginger, grated
2-3 green chilies, finely chopped (adjust according to your spice preference)
2-3 tomatoes, pureed or finely chopped
1/4 cup cashew nuts, soaked in water for 30 minutes
1/4 cup heavy cream or fresh cream
1/2 cup yogurt, beaten
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1 teaspoon garam masala
1 teaspoon dried fenugreek leaves (kasuri methi)
1/4 teaspoon ground cardamom
1/4 teaspoon saffron strands (optional, soaked in 1 tablespoon warm milk)
Salt to taste
Fresh coriander leaves, chopped for garnish
Instructions:
In a blender, grind the soaked cashew nuts to a smooth paste. Set it aside.
Heat the ghee or oil in a large pan or kadai over medium heat. Add the cumin seeds and let them splutter.
Add the finely chopped onions, garlic, and green chilies. Sauté until the onions turn golden brown.
Stir in the grated ginger and cook for another minute.
Add the tomato puree (or finely chopped tomatoes) and cook until the oil starts to separate from the mixture. Stir occasionally to avoid sticking.
Reduce the heat and add the cashew nut paste. Mix well and cook for a couple of minutes.
Add the turmeric powder, red chili powder, garam masala, ground cardamom, and salt. Mix the spices into the sauce.
Now, gently stir in the beaten yogurt. Cook for a few minutes until the mixture thickens.
Pour in the heavy cream and mix well. You can add more or less cream depending on your desired consistency and richness.
Add the saffron milk (if using) and stir it in. This will add a lovely aroma and color to the dish.
Add the paneer cubes and gently mix them with the sauce. Let it simmer for 5-7 minutes on low heat to allow the flavors to meld together.
Crush the dried fenugreek leaves between your palms and sprinkle them over the Shahi Paneer. This will add a unique taste to the dish.
Taste and adjust the salt and spices according to your preference.
Once the paneer is heated through and the sauce has reached the desired consistency, turn off the heat.
Garnish with freshly chopped coriander leaves before serving.
Serve Shahi Paneer hot with naan, roti, or steamed rice for a delightful and rich Indian main course.
