Recipe:
Serves: 4 | Cooking Time: 4 hours

Ingredients:

Focaccia
360g all-purpose flour
1 tsp granulated sugar
1 tsp instant yeast
2 tsps coarse salt
275ml warm water (
2 tbsps olive oil, additional for drizzling
6 medjool dates, pits removed

Brine
50ml warm water
20ml olive oil
½ tsp coarse salt

Caramel
100g soft brown sugar
60ml double cream
45g unsalted butter
1 tbsp molasses
½ tsp coarse salt

Method:
Mix: Combine flour, sugar, yeast, salt, warm water and olive oil into a sticky dough. Rest, then repeat stretch‑and‑folds until smooth. Let rise until doubled.
Proof: Brush the base of the Le Creuset Signature Oval Bread Oven with olive oil. Gently transfer the dough, drizzle with oil, cover with the lid and let rise again until airy.
Dimple: Mix the brine. Press deep dimples into the dough, add the dates and pour the brine over. Cover and place in the oven.
Bake: Heat to 220°C. Once the oven reaches temperature, bake covered for 20 minutes, then uncovered for 10–15 minutes until golden.
Finish: Simmer brown sugar, cream, butter, molasses and salt into a glossy caramel. Drizzle over the warm focaccia.
Serve: Drizzle the caramel while still warm and serve.
