💥 Your Lazy Genius Chicken Biryani Weekly Lunch
Still the easiest, most delicious Chicken Biryani meal prep of your LIFE! This has been my lunch for 3 years straight!
💪 610 Cals | 54g P 🍗 | 63g C 🍚 | 15g F 🥑
✅ WHAT YOU'LL NEED (for 5 amazing portions!)
* The Star Player: 1000g chicken breast, chopped into bite-sized chunks.
* The Fluffy Goodness: 300g white rice.
* Your Veggie Boost: 500g frozen mixed vegetables (still zero chopping required! 🙌).
* The Magic Touch: 50g ghee.
* The Flavour Bomb Crew:
* 1 packet of Shan Memoni Biryani Mix (our forever hero!)
* 2 tsp Turmeric
* 5 tsp Salt
* 3 Cinnamon sticks
* 3 Star anise
* 1 tbsp Cumin seeds (Jeera)
* 2 Big cardamom pods
* 3 Small cardamom pods
* 1 tsp Red chilli powder (turn it up if you're feeling fiery! 🔥)
* A splash of lemon juice or vinegar (2-3 tsp).
LET'S MAKE THE MAGIC HAPPEN! ✨
(The steps are still ridiculously easy, don't you worry!)
STEP 1: GET THAT CHICKEN READY! marinade time!
In a bowl, mix your chopped chicken with ALL the spices and the splash of lemon juice. Get everything coated!
* Pro Tip: An overnight marinade is your ticket to flavour town! But if you're short on time, even 30 minutes makes the chicken happy.
STEP 2: LAYER IT UP, BABY! (the no-mix trick!)
Grab your Nutripot or Instant Pot. Let's build those layers!
* Bottom Layer: Frozen veggies + 400ml of water.
* Middle Layer: Your gorgeously marinated chicken.
* Top Layer: Rinse your rice well and sprinkle it over the top.
REMEMBER: Don't mix! This is the secret sauce to perfect biryani. Trust the layers!
STEP 3: SET IT AND FORGET IT! 🧑🍳
Lid on, vent sealed. Set your pot to Pressure Cook on High for 6 minutes.
Go live your life! The pot does all the hard work. This is what we call smart cooking!
THE FINAL FLOURISH!
Once the timer is done, let the pressure release. Open that lid and enjoy the incredible aroma!
Add the 50g of ghee to make it rich and delicious. Give everything a gentle mix, combining all those beautiful layers. Pop the lid back on for 10 minutes to let the flavours get to know each other.
Garnish with crispy fried onions and fresh coriander if you're feeling fancy!
