# # # 🥣 Ingredients

* Rice paper sheets
* 1 small onion, finely chopped
* 1 small carrot, finely chopped
* ½ capsicum, finely chopped
* Cabbage, finely chopped
* Green chilli, finely chopped
* Salt, to taste
* Black pepper, to taste
* Chilli flakes or seasoning of your choice
* 1–2 tsp oil for pan-frying

# # 👩‍🍳 Recipe

**1. Prepare the filling**
Heat a little oil in a pan. Add onion, carrot, capsicum, cabbage and green chilli. Sauté on medium-high heat for a few minutes so the vegetables remain slightly crunchy.

**2. Season it**
Add salt, black pepper and chilli flakes or your favourite seasoning. Mix well and switch off the heat.

**3. Soak the rice paper**
Take one rice paper sheet and dip it in water for a few seconds until it becomes soft and flexible. Don'’ soak it for too long, as it will become difficult to handle.

**4. Add the filling**
Place the softened rice paper on a flat surface and put the vegetable filling in the centre.

**5. Fold into a square**
Fold the sides over the filling and create a neat square-shaped pocket. Repeat with the remaining rice paper and filling.

**6. Pan-fry**
Heat a non-stick pan and lightly grease it with oil. Place the rice paper squares on the pan and cook on medium heat until both sides become golden, crispy and slightly crunchy.

**7. Serve**
Serve hot with your favourite chutney, chilli sauce or dip. 🌶️🥢

Don't o’ercrowd the pan and avoid using very high heat. Cook on medium heat so the rice paper becomes crispy without burning.

**🥧 Healthy Sooji Veggie Cake Recipe**

**Ingredients:**

* 1 cup sooji (semolina)
* ½ cup curd
* 1 small onion, finely chopped
* 1 small tomato, finely chopped
* ½ capsicum, finely chopped
* 1 green chilli, finely chopped
* Fresh coriander leaves, chopped
* ½ tsp salt
* ½ tsp red chilli flakes (optional)
* ½ tsp oregano or mixed herbs (optional)
* 1–2 tsp oil (to grease the pan)

**Method:**

1. Mix sooji and curd. Add a little water if needed to make a thick batter. Let it rest for **20–30 minutes**.
2. Add onion, tomato, capsicum, green chilli, coriander, salt, and your favorite spices. 3. Mix well.
4. Grease an iron pan with oil and pour the batter into it.
5. Cover and cook on **low flame for 20–25 minutes**, or until a toothpick comes out clean.
6. Let it cool slightly, slice, and serve hot with green chutney or ketchup.

**🥗 Healthy Makhana Chaat Recipe**

**Ingredients:**

* 2 cups makhana (fox nuts)
* 1 small onion, finely chopped
* 1 small tomato, finely chopped
* 1 small cucumber, finely chopped
* ½ cup grated beetroot
* 1 green chilli, finely chopped (optional)
* Fresh coriander leaves
* ½ tsp roasted cumin powder
* ½ tsp chaat masala
* Salt to taste
* 1 tsp lemon juice

**Method:**

1. Dry roast the makhana for 5–7 minutes until crispy.
2. In a bowl, combine the onion, tomato, cucumber, beetroot, green chilli, and coriander.
3. Add roasted cumin powder, chaat masala, salt, and lemon juice. Mix well.
4. Add the roasted makhana just before serving and toss gently.
5. Serve immediately and enjoy this crunchy, healthy, and delicious snack!

Beetroot Chana Kabab Instructions
Prep the Beetroot: Squeeze the grated beetroot gently to remove excess juice. (You can save this juice to knead into dough or drink it, but removing it helps the kebabs hold their shape).
Mash the Chana: Drain the boiled kala chana completely. Mash them thoroughly or pulse them until they form a coarse paste. Do not add water.
Sauté the Veggies (Optional but Recommended): Heat a drop of oil in a pan and briefly sauté the minced mixed veggies for 2-3 minutes to remove raw moisture. Let them cool.
Combine the Mixture: In a large mixing bowl, bring together the mashed kala chana, squeezed beetroot, sautéed veggies, and thick dahi.
Add Flavors and Bind: Add the ginger-garlic paste, green chilies, coriander, cumin powder, garam masala, chaat masala, chili powder, and salt. Add the roasted besan (or breadcrumbs). Mix everything thoroughly using your hands.
Test the Consistency: The mixture should hold its shape when rolled. If it feels too wet or sticky, add another tablespoon of roasted besan.
Shape the Kebabs: Lightly oil your palms and take a lemon-sized portion of the mixture. Roll it into a smooth ball and flatten it slightly to form a patty (tikki).
Pan-Fry: Heat a flat pan or tawa over medium heat and add a shallow layer of oil or ghee. Carefully place the kebabs on the pan. Cook for 3-4 minutes on one side until a crisp crust forms, then gently flip and cook the other side.

Pro-Tips
The Dahi: Ensure your yogurt is as dry as possible. If regular dahi is too watery, tie it in a muslin cloth for 20 minutes before using to strain the whey.
Serving: Serve hot with a cooling mint-coriander chutney to complement the warmth of the spices and the sweetness of the beetroot.
