Amritsari Chole Bhature
# # 1. Naram aur Phoole Bhature Kaise Banayein?
**Ingredients:**
* Maida: 2 cup
* Suji (Rava): 2-3 bade chammach (is-se bhature thode crispy bante hain)
* Dahi: ½ cup
* Cheeni: 1 chammach
* Namak: Swad anusar
* Baking Powder: ½ chammach
* Tel: 2 chammach (moin ke liye) aur talne ke liye
**Method:**
1. Ek bade bartan mein maida, suji, namak, cheeni aur baking powder ko mix karein.
2. Ab ismein dahi aur tel daalein. Thoda-thoda gunguna paani daalkar ek **soft dough** (aata) goonth lein.
3. Aate ko kam se kam 5-10 minute tak hatheli se patak-patak kar goonthein taaki wo lachila ho jaye.
4. Aate par thoda tel lagayein aur ek geele kapde se dhak kar **2-3 ghante** ke liye chhor dein (Khameer uthne ke liye).
5. Phir garma-garam tel mein bel kar sunhera hone tak talein.

# # 2. Chatpate Punjabi Chole (Pindi Style)
**Ingredients:**
* Kabuli Chane: 1 cup (raat bhar bhigoye hue)
* Khade Masale: 1 tej patta, 1 badi elaichi, 2-3 laung, 1 dalchini ka tukda.
* Chai Patti: 1 chammach (ek potli mein bandh kar chane ubaalte waqt daalein, is-se dark colour aata hai).
* Masale: Adrak-lehsun paste, pyaaz ka paste (2 bade), tamatar puree (2 bade), dhaniya powder, amchur (khatai ke liye), aur **Chole Masala**.
**Method:**
1. **Ubaalna:** Pressure cooker mein chane, paani, khade masale, namak aur chai patti ki potli daalkar 5-6 seeti lagayein jab tak chane naram na ho jayein.
2. **Tadka:** Ek kadhai mein tel garam karein. Jeera daalein, phir pyaaz ka paste dalkar golden brown hone tak bhunein.
3. **Masala:** Adrak-lehsun paste aur tamatar puree daalein. Jab tel alag hone lage, toh saare sukhe masale (dhaniya, haldi, mirch, amchur aur chole masala) daal dein.
4. **Mix:** Ubale hue chane (paani aur chai patti ki potli hata kar) masale mein daalein. Thoda sa mash kar dein taaki gravy gaadhi ho jaye.
5. **Final Touch:** Thoda gunguna paani daalkar 10 minute dhak kar pakayein. Upar se hara dhaniya aur lambi kati hui adrak/hari mirch ka tadka lagayein.
