We haven’t heard of anyone who doesn’t love the good ol’ gajar ka halwa. Have you?
Gajar ka halwa, also known as gajrela, gajar pak, and carrot halwa is a carrot-based sweet dessert pudding. In winters this is a staple dessert in our family, my fondest winter memories can be associated with gajar ka halwa – It has been a family favorite in my parental home as well as here in my in-laws’ home. Come winter season and the huge pots and vessels are out to prepare such delicacies with carrots being grated, milk being simmered – the tedious process always results in with the fabulous outcome in the form of this delicious dessert. By the end of it we have our hands all red and smeared with the juicy fresh carrots and impressions of the ladle due to continuous stirring, but we aint complaining afterall we get to eat our favv gajar ka halwa. We go with the traditional way while making this delicacy using only full fat milk and no processed ingredients like khoya, condensed milk or evaporated milk. Our halwa is made using only fresh juicy red carrots straight from the farms, ghee, nuts and sugar all simmered in milk and slow cooked for hours while continuously stirring it all.
