Amritsari is a popular made with and cooked in a rich and spicy onion tomato gravy, served with
Recipe:
- 1 cup soya nuggets
- ½ cup soya granules
- 2 medium onions, chopped
- 2 medium tomatoes, chopped
- 1 teaspoon ginger-garlic paste
- 2-3 pieces of each Whole Spice (Bayleaf, Cinnamon Sticks, Black Cardamom, Black Peppercorn, Cloves, Green Cardamom)
- 2-3 Tbsp Boiled spinach paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon garam masala powder
- 1 teaspoon amchur powder
- 1 teaspoon red chili powder
- Salt, to taste
- 2 tablespoons butter or oil
- Chopped cilantro, for garnish
- Kulchas, for serving
Instructions:
1. Soak the soya nuggets and soya granules in boiling water with salt and tea bags for 5-7 minutes. Drain and squeeze out excess water.
2. Heat butter or oil in a pan, add whole spices and cumins, till it crackles and sauté the chopped onions until golden brown. Add the ginger-garlic paste, cook for a while. Then add tomato paste and cook for 5-7 minutes. Add coriander powder, garam masala powder, amchur powder, and red chili powder. Cook for 1-2 minutes.
3. Add the palak paste and cook for 7-8 minutes and then add soya nuggets. Cook for 5-7 minutes or until the masala is cooked. Now add hot water and let it cook till gravy thickens and becomes shiny.
4. Season with salt to taste. Serve the Amritsari Nutri hot with hot kulchas and garnished with chopped cilantro.
