🔥 Paneer Tikka (Indian Grilled Cottage Cheese Skewers)

🕒 Prep Time: 15 mins (plus marination)

🍳 Cook Time: 15–20 mins

🍽️ Serves: 3–4

🧾 Ingredients

For the Marinade:

200–250g paneer (cut into 1.5-inch cubes)

1/2 cup thick curd/yogurt (preferably hung curd or Greek yogurt)

1 tbsp besan (gram flour) – roasted

1 tbsp lemon juice

1 tbsp oil

1 tsp ginger-garlic paste

1/2 tsp turmeric powder

1 tsp red chili powder (or Kashmiri red chili for color)

1/2 tsp garam masala

1/2 tsp cumin powder

Salt to taste

For the Veggies (Optional):

1 small onion – cut into petals

1/2 capsicum (bell pepper) – diced

1/2 tomato – deseeded and diced
(Use red, yellow, green peppers for color)

🍢 Instructions

1. Prepare the Marinade

In a large bowl, whisk the yogurt until smooth.

Add besan, spices, ginger-garlic paste, lemon juice, and oil. Mix well.

Taste and adjust salt/spices.

2. Marinate the Paneer and Veggies

Add paneer cubes and chopped veggies.

Gently mix so everything is well coated. Be careful not to break the paneer.

Cover and refrigerate for at least 30 minutes (1–2 hours preferred for deeper flavor).

3. Cook the Tikka

You have 3 options:

A. On Tawa/Pan (Stovetop)

Heat a little oil in a nonstick or cast-iron pan.

Place the marinated paneer and veggies on the pan.

Cook on medium flame, turning occasionally, until charred and golden on all sides.

B. In Oven

Preheat oven to 220°C (425°F).

Arrange paneer and veggies on skewers.

Place on a baking tray lined with foil or parchment.

Bake for 10–12 minutes, then broil (or grill) for 2–3 minutes until slightly charred.

C. On Grill

Grill on skewers over medium-high heat until lightly charred and cooked (turn occasionally).

🍽️ To Serve

Sprinkle chaat masala and lemon juice on top.

Serve with green chutney and onion rings.

✅ Tips

Use firm paneer for best results.

If using wooden skewers, soak them in water for 30 mins before grilling to prevent burning.

Don’t overcook the paneer—it can turn rubbery.

🌱 Moong Dal Chilla (Savory Lentil Pancakes)
🕒 Prep Time: 10 mins (plus soaking time)
🍳 Cook Time: 20 mins
🍽️ Serves: 2–3 (Makes 6–8 chillas)
🧾 Ingredients

1 cup moong dal (split yellow lentils)
1–2 green chilies (adjust to taste)
1-inch piece of ginger
1/2 tsp cumin seeds (jeera)
Salt to taste
Water as needed (for batter)
2–3 tbsp chopped coriander leaves
1/4 cup finely chopped onions (optional)
Oil or ghee for cooking

🥣 Optional Add-ins

Grated carrots or beetroot
Finely chopped spinach or methi
Crumbled paneer for stuffing

🍽️ Instructions
1. Soak the Dal

Rinse and soak 1 cup moong dal in water for 3–4 hours or overnight.

2. Prepare the Batter

Drain the soaked dal.
Blend with green chilies, ginger, cumin seeds, and a little water (as needed) into a smooth, pourable batter.
Add salt, chopped onions, and coriander leaves. Mix well.

3. Cook the Chillas

Heat a nonstick or iron tawa (griddle) and lightly grease with oil.
Pour a ladleful of batter onto the center and spread it in a circular motion like a pancake or dosa.
Drizzle a few drops of oil or ghee around the edges.
Cook on medium heat until golden brown and crisp on one side (about 2–3 minutes), then flip and cook the other side.

4. Serve

Serve hot with green chutney, tomato ketchup, or yogurt.

✅ Tips

The thinner you spread the chilla, the crisper it will be.
Use a well-seasoned tawa to prevent sticking.
You can also stuff them with paneer or veggies for a more filling version.

🧂 Ingredients:

1 cup soya granules (nuggets or chunks)

1 medium potato, boiled and mashed

½ cup grated carrot (optional)

½ onion, finely chopped

2 tbsp coriander leaves, finely chopped

1 green chili, chopped (optional)

½ tsp ginger-garlic paste

1–2 tbsp besan (gram flour) or oats powder (as binder)

1–2 tsp lemon juice

1 tbsp oil for shallow frying

Soak soya granules in hot water for 10 minutes. Squeeze out excess water thoroughly.

Mix the Base
In a bowl, mix the mashed potato, soaked soya, grated carrot, onion, and all spices.

Bind the Mixture
Add besan or oats powder for binding. Mix until it forms a soft dough. Adjust salt and spices.

Use sweet potato instead of regular potato for a lower glycemic index.

Add flaxseed powder or chia seeds to boost fiber and omega-3.
