To ensure your shrooms remain fresh and have a longer shelf life, store them in the refrigerator, in a brown paper bag or basket as this will prevent moisture retention while still allowing the mushrooms to “breathe.”

Mushroom Pilaf🍛

This healthy, hearty concoction of rice and mushrooms makes for a great meal in the middle of your busy day.

It will be sure to satiate your taste buds without weighing heavy on your stomach, or your time!

Servings: 4 hungry people
Total cooking time: 30 minutes

Ingredients:
400g white button mushrooms (or a mix of different mushrooms), sliced

1 medium/large onion sliced

1 cup of boiled rice (preferably basmati)

1 tbsp red chilli flakes

1 tbsp za'atar powder

1 tsp cumin powder

1 tbsp balsamic vinegar

Salt (to taste)

Feta cheese to garnish (optional)

Coriander, chopped to garnish (optional)

Roasted Pine nuts to garnish (optional)

Method:
1. In a saucepan, add some olive oil to cook the onion until slightly brown on a low flame.
2. Add mushrooms and salt to taste
3. Combine well with chilli flakes, za'atar, cumin powder and balsamic
4. Add boiled rice and mix well
5. Serve hot with a sprinkle of feta cheese, pine nuts and coriander!

Buckwheat Mushroom Waffles🧇

The ideal on-the-go breakfast — quick, nutritious and obviously, delicious!

Cook Time: 15 mins.
Serving: 4-5 waffles

Ingredients

1/2 cup buckwheat flour

1/2 cup oat flour

1 tbsp chia seeds

1 tsp baking soda

200g white button mushrooms

1 tsp garlic powder

1 tsp onion powder

1/4 tsp salt

pinch pepper

1 cup water + 3tbsp

1 tbsp olive oil

1 tbsp apple cider vinegar

Method:

1. Heat some oil on a pan over med-high heat and cook the mushrooms until golden brown.
2. Once the mushrooms are browned, add salt to taste and set aside to cool.
3. In a mixing bowl, combine the buckwheat flour, oats flour, chia seeds, onion powder, garlic powder, salt and pepper with the water and oil and whisk until a smooth, thick batter is formed.
4. Then pour in the apple cider vinegar and whisk again quickly.
5. Once it is well mixed, add the sautéed mushrooms and gently fold into the batter.
6. Ensure to keep the mixture warm on a baking sheet in an oven until you’ve cooked up all the batter.
7. Get your waffle iron ready to go and cook waffles according to waffle iron instructions and voila! A nutritious breakfast ready to go.

We recommend making a batch a few days in advance to last 2-3 days in the refrigerator. Simply toast and take it to-go!
