Panta bhat is a traditional fermented rice dish popular in Bangladesh and parts of West Bengal, Assam, and Odisha. It is made by soaking cooked rice in water overnight, allowing it to ferment slightly by morning.

It is usually eaten cold and commonly served with:

* Salt
* Green chili
* Onion
* Fried fish
* Pickles
* Mashed potato or vegetables

It is especially popular during summer because it is cooling and refreshing. In Bangladesh, it is famously eaten during Pohela Boishakh (Bengali New Year).

Loitta Shutki & Bengal: A Story of Taste, Travel & Survival
Loitta (Bombay duck) shutki is not just food for Bengalis—it’s memory.
During the partition of Bengal (1947), many Bangal families migrated from East Bengal (now Bangladesh) to West Bengal. Fresh fish was scarce, but sun-dried shutki travelled easily, survived long journeys, and carried the taste of home.
Loitta shutki became a symbol of resilience—strong smell, stronger emotions.
Even today, its aroma may divide opinions, but for Bangals, it’s comfort, identity, and heritage on a plate ❤️
🔥 Loitta Shutki Bata (Traditional Bangal Style)
Ingredients:
• Loitta shutki – soaked & cleaned
• Mustard oil
• Green chillies 🌶️
• Garlic (optional but very Bangal-approved 😄)
• Onion
• Salt
• A dash of lemon / tamarind water
Method:
1️⃣ Dry roast or lightly fry the loitta shutki in mustard oil
2️⃣ Mash it with green chillies, onion & garlic
3️⃣ Add salt and a few drops of lemon/tetul jol
4️⃣ Finish with raw mustard oil on top (mandatory 💛)
👉 Best enjoyed with hot gorom bhat & kacha lonka
