🌶️ Maharashtrian Thecha (Spicy Maharashtrian Chili–Garlic Chutney)

Thecha is a fiery chutney from the state of Maharashtra, usually served with bhakri, roti, or dal-rice. It’s famous for its strong green chilli and garlic flavor and takes only a few minutes to make.



🧄 Ingredients
• 10–12 green chillies (adjust to spice level)
• 6–8 garlic cloves
• 2 tbsp roasted peanuts (optional but traditional)
• 1 tbsp oil
• ½ tsp mustard seeds
• 8–10 curry leaves (optional)
• Salt to taste



🍳 Method
1. Roast the chillies
• Heat a pan with a little oil.
• Roast green chillies for 2–3 minutes until slightly blistered.
2. Add garlic
• Add garlic cloves and roast for 1 minute.
3. Crush (traditional way)
• Use a mortar and pestle to roughly crush the roasted chillies, garlic, peanuts, and salt.
• The texture should be coarse, not smooth.
4. Tempering (optional but tasty)
• Heat oil, add mustard seeds and curry leaves.
• Pour this over the crushed mixture and mix.

💙 Blue Soda White Grape Drink

📝 Ingredients (Serves 2)
• 1 cup white grapes (crushed or blended)
• 2 tbsp blue curacao syrup (non-alcoholic)
• 1 tbsp lemon juice
• 1–2 tbsp sugar syrup (optional)
• Chilled soda (about 2 cups)
• Ice cubes
• Mint leaves (for garnish)
• Lemon slices (optional)

👩‍🍳 Method

1️⃣ Blend white grapes and strain to get fresh juice.
2️⃣ Take a tall glass and add ice cubes.
3️⃣ Pour grape juice (½ glass).
4️⃣ Add blue curacao syrup slowly.
5️⃣ Add lemon juice and sugar syrup (if needed).
6️⃣ Top up with chilled soda.
7️⃣ Stir gently for a beautiful blue-purple gradient.
8️⃣ Garnish with mint and grapes.

Serve immediately 🥤✨

🥖 Cream Bun Recipe (Eggless)

📝 Ingredients (Makes 8 buns)

For the Buns:
• 2½ cups maida (all-purpose flour)
• 2 tbsp sugar
• 1 tsp instant yeast
• ½ tsp salt
• 2 tbsp butter or oil
• ¾–1 cup warm milk (as needed)

For the Cream Filling:
• 1 cup chilled whipping cream
• 2–3 tbsp powdered sugar
• ½ tsp vanilla essence

Optional:
• Butter for brushing
• Powdered sugar for dusting

👩‍🍳 Method

1️⃣ Prepare the Dough
1. Mix flour, sugar, yeast, and salt.
2. Add butter and mix well.
3. Gradually add warm milk and knead into a soft dough.
4. Knead for 8–10 minutes until smooth and elastic.
5. Cover and let it rise for 1–1.5 hours (until doubled).

2️⃣ Shape & Bake
1. Punch down the dough and divide into 8 equal balls.
2. Shape into smooth buns and place on a baking tray.
3. Cover and let them rise again for 30–40 minutes.
4. Bake at 180°C for 15–18 minutes until golden.
5. Brush with butter and cool completely.

3️⃣ Prepare Cream
1. Whip chilled cream with powdered sugar and vanilla until stiff peaks form.
2. Keep refrigerated until use.

4️⃣ Assemble
1. Once buns are completely cool, slice in the center (not fully through).
2. Fill generously with whipped cream using a spoon or piping bag.
3. Dust with powdered sugar.

Ingredients

For the Masala Powder (Can be stored):
• Almonds (Badam): ¼ cup
• Pistachios (Pista): ¼ cup
• Cashews (Kaju): 2 tbsp
• Cardamom (Elaichi) pods: 8-10
• Nutmeg (Jaiphal) powder: ½ tsp (essential for the Maharashtrian flavor)
• Saffron (Kesar) strands: 15-20

For the Milk:

• Full-fat Milk: 1 liter
• Sugar: ¼ cup (adjust to taste)
• Saffron strands: A pinch (soaked in 1 tbsp warm milk)
• Sliced nuts: For garnish

Instructions

1. Make the Masala: * Lightly roast the almonds, pistachios, and cashews in a pan for 2 minutes to remove moisture.
• Once cool, grind them into a coarse powder along with cardamom seeds and saffron.
• Mix in the nutmeg powder. Pro-tip: Don't grind too long, or the nuts will release oil and turn into a paste.

2. Boil the Milk: * In a heavy-bottomed pot, bring the milk to a boil.
• Lower the heat and let it simmer for 10–12 minutes, stirring occasionally, until it reduces slightly and thickens.

3. Add Flavor: * Add the sugar and 3–4 tablespoons of your freshly prepared Masala Powder.
• Pour in the saffron-soaked milk for that beautiful golden hue.

4. Simmer: * Let it simmer for another 5 minutes so the flavors of the nuts and spices infuse thoroughly into the milk.

5. Serve: * Pour into glasses. Garnish with more sliced almonds, pistachios, and a few strands of saffron.

• Serve it steaming hot in winters or chilled as a refreshing summer treat.
