4tbsp Hung Curd
2tbsp Sorse Posto Paste
Mustard oil

2tbsp Besan
Black salt as per taste

Grilled Chicken With Lemon Mushroom Sauce

Chilli Mango Roasted Chicken

Ingredients
For the Chicken
3 chicken thighs with skin
Salt to taste
1/2 tsp black pepper
1 tbsp grated garlic
1 tbsp oil
For the Mango Glaze
1/2 cup mango pulp
1 tsp sugar
2 tsp light soy sauce
1/2 tsp red chilli powder
Salt to taste

Process
Marinate the chicken with salt, black pepper, grated garlic, and oil. Let it rest for 30 minutes.
Preheat the oven to 180°C for 10 minutes. Roast the chicken for 25–30 minutes or until cooked through and nicely browned.
Meanwhile, heat a pan and add all the ingredients mentioned in the glaze section. Cook it down until the glaze becomes thick and jammy.
Brush the glaze generously over the roasted chicken and broil for 2 minutes.
Serve hot with fresh mango chunks and a lime wedge.

Gondhoraj Bhetki, Oh ! Calcutta Style !

Ingredients
3 pc Bhetki Fillet
1/2 tbsp grated ginger and Green Chilli
Salt as per taste
Lime juice

For the Marination

100 gm Hung Curd
3tbsp fresh Cream
2tbsp beaten egg
Salt asper taste
1/2 tbsp Sugar
Grated Gondhoraj Lebur Zest

Process
Marinate the fish with salt lime juice, grated ginger and Green Chilli.

Mix everything mentioned in the ingredients for the Marination.

Now mix the Marination with Fish and wrap it in banana leaf.

Steam it for 5-6 mins and serve hot !
