Here is the Recipe:
*Ingredients* :
- 1 cup jackfruit seeds (boiled & peeled)
- 2 tbsp wood‑pressed groundnut oil
- Cumin & mustard seeds (for tadka)
- Curry leaves
- Red chilli – 1
- Green chilli – optional
- Onion – 1 medium
- Tomatoes – 2 medium
- Red chilli powder – ¼ tsp
- Coriander powder – ½ tsp
- Cumin powder – ¼ tsp
- Garam masala – ¼ tsp (optional)
- Ginger garlic paste – 1 tsp (optional)
- Turmeric powder – ¼ tsp
- Salt – to taste
- Fresh coriander leaves
*Method:*
- Pressure cook jackfruit seeds for 2–3 whistles, peel, and cut.
- Heat oil in a pan, add tadka (cumin, mustard, curry leaves, red chilli).
- Add onions, salt, turmeric; cook till soft.
- Add ginger garlic paste (optional), sauté till raw smell goes.
- Add tomatoes, cook till mushy.
- Mix in red chilli, coriander, cumin, and garam masala powders; cook 2 mins.
- Add jackfruit seeds, ½ glass water, cover, and simmer for 5 mins.
- Garnish with coriander leaves.
Perfect with rice or roti, this curry is a simple way to add traditional nutrition to your family’s meals.
