If Viognier makes such aromatic, expressive wines… why isn’t it everywhere?

According to Jean-Claude Mas of Domaines , the answer is simple: it’s a difficult grape to grow.

Viognier demands precision - too much heat, and it loses freshness; harvest too late, and it becomes heavy; too early, and it lacks character. It’s a narrow window that not every region - or grower -can get right.

In places like Languedoc, the balance is possible - but never easy.

The takeaway?
Some of the most exciting wines come from the hardest grapes to master.

If Languedoc has ideal conditions… why isn’t it as famous as Bordeaux?

According to Jean-Claude Mas of Domaines , it’s not about quality, it’s about history.

Bordeaux has built its global reputation over centuries, with strong classification systems and international demand. Languedoc, on the other hand, was long associated with volume over prestige.

But that’s changing.

Today, Languedoc is one of the most dynamic wine regions in the world, focused on quality, innovation, and value.

The takeaway?
Reputation takes time… but great wine doesn’t wait.

Can vines keep up with climate change?

For Jean-Claude Mas of Domaines , the answer is simple:
Vines don’t just adapt-they evolve.

In Languedoc, choosing the right varietal in the right place is everything. As conditions shift, so do the decisions—because great wine depends on working with nature, not against it.

The future of wine belongs to those who evolve with it.

Phylloxera destroyed Languedoc once… so is it still a threat today?

In the late 1800s, this tiny pest devastated vineyards across Languedoc—forcing winemakers to completely rethink how vines are grown. Fast forward to today, and producers like Jean-Claude Mas of Domaines Paul Mas are still working with that legacy.

Here’s the reality:
Phylloxera hasn’t disappeared.
It’s just been managed.

By grafting vines onto resistant rootstocks, vineyards across Languedoc—including those behind Paul Mas wines—stay protected. But the threat never fully goes away, which is why constant vigilance is part of modern winemaking.

The takeaway?
Phylloxera didn’t end Languedoc—it forced it to evolve.

Muscat, Moscato, and Moscatel all refer to the same grape variety—one of the oldest in the world.

Muscat is the original, global name.
Moscato is what it’s called in Italy, often used for light, aromatic, slightly sparkling wines like Moscato d’Asti.
Moscatel is the Spanish and Portuguese name, usually seen in richer, sweeter styles.

The grape stays the same—the name and style change depending on the region.

Happy World Moscato Day
