Try this healthy salad as a bowl or as a quick snack.

TSC SWEET POTATO QUINOA
Ingredients:
- 1 medium sweet potato, cubed*
- Extra-virgin olive oil, for drizzling
- 1 cup cooked quinoa
- 2 scallions, finely chopped
- 2 cloves garlic, finely chopped
- ⅓ cup crumbled feta cheese
- 2 cups salad greens
- 1 tsp Mixed Herbs or Oregano
- 1/4 cup sliced mushrooms
- 1 tbsp The Sauce Co’s Chilli Garlic
- 1 tbsp The Sauce CO’s Honey Chipotle
- Juice of ½ lemon, more to taste
- Basil Leaves
- Sea salt and freshly ground black pepper
Method:
1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
2. Toss the sweet potatoes with a drizzle of olive oil and a few pinches of salt, pepper and mixed herbs. Roast until golden brown, 25 to 35 minutes.
3. For the dressing, in a bowl, add 1 tbsp TSC Chilli Garlic, TSC Honey Chipotle, 1 tbsp lime juice, olive oil, salt and pepper and give it a good mix. Set aside.
4. In a pan, add 1 tbsp oil, garlic and sauté, add in the sliced mushroom and cook until golden brown.
I’m a salad bowl, toss the roasted sweet potatoes, quinoa, scallions, feta, salad greens and some mushrooms. Pour the dressing and mix till combined.
5. Take a cookie cutter or a big round cutter, place it on a plate and fill it with the quinoa to get the desired shape. Remove the cutter and garnish with some more mushrooms and basil leaves.
6. Serve immediately or chill in the fridge. Enjoy!
