5 min Pineapple curry 🍍

This dish has its origin from Udupi & is a best seller at Bungalow. A restaurant run by chef Vikas Khanna who also happens to win the 2024 Michelin Bib Gourmand award recently.

Roasted Pineapple:
-cut pineapple into thick circles.
-In a pot, add 1/2tsp turmeric powder, 1/2tsp red chilli powder, 1 star anise, 1 small bay leaf, a small pc of ginger, very small pc of turmeric, sugar & salt,
-Place the pineapple in this & let it boil for 10min on simmer. The pineapple will become tender.
-Place it in a pan with some oil & cook it on both sides till properly roasted as shown in the video.
Creamy Coconut Curry:
-Add some coconut oil, pinch of hing, 1/2tsp mustard seeds, 1 green chilli chopped, few curry leaves. Let it splutter.
-Add 1tsp turmeric powder. Mix well.
-Add 1 cup coconut cream (readily available in the market)
-Add 1tsp full rice flour.
-Salt to taste
-Let it come to a boil & cook for a few minutes.

Ema Datshi | The Heart of Bhutan: Spicy, Cheesy, & Comforting | Well Done Devrat ✨

Creamy, fiery, and deeply comforting, Ema Datshi is the national dish of Bhutan. This simple yet bold stew is a celebration of two main stars: chilies (Ema) and cheese (Datshi).

Unlike most cuisines where chili is used as a seasoning, here it is treated as the primary vegetable. The result is a silky, rich sauce that balances the heat of the green chilies with the velvety smoothness of melted cheese.
It’s a soulful dish that brings warmth to any table.

🗒️ Ingredients:
* Green Chilli - 5-6 (slit lengthwise)
* Garlic - 10-12 pods (smashed and roughly chopped)
* Cheese Slice - 2
* Butter - 1 tbsp
* Oil - 1 tbsp
* Water - as required
* Salt - to taste

🍽️ Method:
Heat 1 tbsp oil and 1 tbsp butter in a pan over medium heat. Let the butter melt and mingle with the oil to prevent it from burning.

Add the smashed and chopped garlic along with the
slit green chilies. Sauté them for a minute until the garlic becomes fragrant and the chilies soften slightly.

Pour in a little water (just enough to partially submerge the chilies) and add salt to taste. Cover the pan and let it simmer for 3-5 minutes until the chilies are tender.
Lower the flame and place the cheese slices over the mixture. Do not stir immediately; cover the pan for another minute to let the cheese melt into the liquid.

Once the cheese is gooey, give it a gentle stir to create a creamy, emulsified sauce. The consistency should be thick enough to coat the chilies.
Turn off the heat and serve immediately while the
cheese is silky and hot.

Homemade Skyr Yogurt 🍦

🗒️ Ingredients
• 1 liter full fat milk
• 2 tbsp plain skyr or thick yogurt (starter culture)

Method:

Step 1: Heat the milk
Pour the milk into a pot and heat it until it is very hot but not boiling.
You’ll see steam and tiny bubbles at the edges.

Step 2: Cool it down
Let the milk cool until it feels warm, not hot (around 40-45°C).

Step 3: Add the culture
Mix the 2 tbsp skyr/yogurt with a little warm milk first.
Then stir it back into the pot.

Step 4: Ferment
Cover the pot and keep it somewhere warm for 8-10 hours.
By morning you’ll have thick set yogurt

Step 5: Strain
Line a strainer with cheesecloth or a cotton cloth.
Pour the yogurt into it and let it strain 2-3 hours in the fridge.
The whey will drip out and what remains is super thick skyr.

Tomatoes, cucumber and onion as required

Chaat masala- 1-2 Tbsp

🗒️ Recipe details:
2 medium sized onions
Chopped coriander
1 tsp chopped green chillies
1 tsp jeera powder
1 tsp coriander powder
1 tsp Aamchur
1 tsp Ajwain
1 tsp red chilli powder
1 tsp garam masala
2 tbsp besan
Salt as per taste

In a bowl add thinly sliced onions, add all the dry spices along with chopped coriander, green chilies and besan Don’t add salt now, it will make onions watery
Roll a thin roti and spread a generous layer of this onion masala on it and cover it with another thin roti
Seal it properly and make a roll of this as shown in the video
Roll it gently and cook it until crispy and flaky by applying some oil/ghee/butter

Homemade Cream Cheese 🫕

How to make?

🗒️ Ingredients
• 1 litre full-fat milk
• 2-3 tbsp lemon juice or white vinegar
• 3 tosp milk
• 1/3 tsp salt

Method:
1. Pour milk into a heavy pan. Heat on medium until it just starts to boil. Stir occasionally so it doesn’t stick.
2. Lower the flame. Add lemon juice slowly while stirring.
The milk will split into curds and whey. If it doesn’t fully curdle, add a little more lemon juice.
3. Turn off heat. Strain through a muslin cloth or clean cotton cloth.
Rinse lightly with cold water to remove the lemon taste.
4. Squeeze out excess water. Let it hang for 20-30 minutes.
Don’t over-dry it. Slight moisture keeps it creamy.
5. Add the drained curds, fresh cream, and salt to a blender.
Blend until smooth and creamy. Scrape sides and blend again if needed.
6. Refrigerate for at least 1-2 hours. It thickens more as it chills.

Texture Tip:
For extra smooth cream cheese, blend longer.
For a thicker spread, drain the curds a bit more before blending.
