There are some recipes you make once, and then there are the ones you keep coming back to. 🤎 These Almond Apple Cinnamon Cupcakes are soft, wholesome, naturally sweetened with maple syrup, and packed with warm cinnamon and juicy apple in every bite. Perfect with a cup of chai or coffee, and even better shared with family.

🧁 Almond Apple Cinnamon Cupcakes

Ingredients
• 4 large eggs
• 1½ cups (150g) almond flour
• ⅓ cup (110ml) pure maple syrup
• 3 tbsp almond butter
• 1 tsp vanilla extract or vanilla bean paste
• 2 tsp baking powder
• 1 medium apple, peeled and diced
• 1 tbsp ground cinnamon
• A handful of sliced almonds, for topping

Method

1. Preheat your oven to 175°C (350°F) and line a muffin tray with cupcake liners.
2. Toss the diced apple with the cinnamon and set it aside.
3. In a large bowl, whisk together the eggs, maple syrup, almond butter and vanilla until smooth.
4. Add the almond flour and baking powder, then gently fold everything together until just combined.
5. Fold in the cinnamon-coated apples.
6. Divide the batter evenly between the cupcake liners and sprinkle the sliced almonds on top.
7. Bake for 25–30 minutes, or until a toothpick inserted into the centre comes out clean.
8. Let the cupcakes cool for about 10 minutes before enjoying.

Vegan Ragi tea Cake 🍰

Whole Wheat Bread / Pav 🍞✨

Ingredients:
• 430g fine organic whole wheat flour
• 35g vital wheat gluten (optional but helps softness)
• 1.5 tbsp milk powder
• 1.5 tbsp sugar
• 1.5 tsp salt
• 7g active dry yeast
• 410g warm milk + extra 80ml for blooming yeast
• 2 tbsp oil (30g)

Method:

1. Mix yeast, sugar & 80ml warm milk. Let it bloom.
2. In a bowl, combine all dry ingredients.
3. Add bloomed yeast and mix gently.
4. Add remaining warm milk gradually and start mixing.
5. Knead for 8–10 mins until smooth.
6. Add oil and knead again for 3–4 mins.
7. Place in a greased bowl, cover & let rise for 1 hour or until doubled.
8. Shape into loaf / pav buns as desired.
9. Cover and proof again until doubled.
10. Brush top with milk + honey mixture.
11. Bake at 180°C for 38 mins.
12. Brush with butter after baking, cover with a damp cloth & let cool.
