There are some recipes you make once, and then there are the ones you keep coming back to. 🤎 These Almond Apple Cinnamon Cupcakes are soft, wholesome, naturally sweetened with maple syrup, and packed with warm cinnamon and juicy apple in every bite. Perfect with a cup of chai or coffee, and even better shared with family.
🧁 Almond Apple Cinnamon Cupcakes
Ingredients
• 4 large eggs
• 1½ cups (150g) almond flour
• ⅓ cup (110ml) pure maple syrup
• 3 tbsp almond butter
• 1 tsp vanilla extract or vanilla bean paste
• 2 tsp baking powder
• 1 medium apple, peeled and diced
• 1 tbsp ground cinnamon
• A handful of sliced almonds, for topping
Method
1. Preheat your oven to 175°C (350°F) and line a muffin tray with cupcake liners.
2. Toss the diced apple with the cinnamon and set it aside.
3. In a large bowl, whisk together the eggs, maple syrup, almond butter and vanilla until smooth.
4. Add the almond flour and baking powder, then gently fold everything together until just combined.
5. Fold in the cinnamon-coated apples.
6. Divide the batter evenly between the cupcake liners and sprinkle the sliced almonds on top.
7. Bake for 25–30 minutes, or until a toothpick inserted into the centre comes out clean.
8. Let the cupcakes cool for about 10 minutes before enjoying.
