Swap heavy cream for the natural richness of cashews. This velvety, aromatic stew is pure comfort on a plate.

Ingredients:
500g Chicken Breast (cubed)
The Gravy: ½ cup cashews (soaked), 1 large onion (chopped), 2 tsp white peppercorns (ground).
The Spices: 1 tsp ginger-garlic paste, 1 tsp cumin seeds, salt.
Finish: 1 tsp ghee, fresh cilantro.

Method:
1️⃣ Sauté: Heat ghee; add cumin seeds and ginger-garlic paste. Sauté onions until translucent.
2️⃣ Simmer:Add chicken and ground white pepper. Cook until the chicken changes color.
3️⃣ Blend: Grind the soaked cashews into a smooth paste with a little water.
4️⃣ Finish: Pour the cashew paste over the chicken. Simmer on low heat for 8–10 mins until the gravy thickens and the chicken is tender.

Meet our Makhani 2.0: We’ve swapped the heavy fats for roasted pumpkin puree. It creates that signature velvety texture and rich golden color naturally, making it lighter on the stomach but just as satisfying!

The Recipe (Serves 2):

Ingredients:
400g Chicken Breast/Thighs (cubed)
1 cup roasted pumpkin puree (steam/roast pumpkin and blend)
1 large onion (finely chopped)
1 tbsp ginger-garlic paste
2 tbsp Greek yogurt (or hung curd)
Spices: 1 tsp Kashmiri red chili powder, 1 tsp Garam Masala, ½ tsp turmeric, salt.
1 tsp honey & fresh coriander for garnish.

Method:
1️⃣ Marinate: Toss chicken with salt, turmeric, and half the ginger-garlic paste for 15 mins.
2️⃣ Sear: In a non-stick pan with a tsp of ghee/oil, sear the chicken until golden. Remove and set aside.
3️⃣ The Base: Sauté onions until soft. Add the remaining ginger-garlic paste and the pumpkin puree. Simmer for 3–5 mins.
4️⃣ Spice it up: Add chili powder and salt. If it's too thick, add a splash of water or low-fat milk.
5️⃣ Simmer: Add the chicken back in, cover, and cook for 5–7 mins until tender. Stir in honey and Garam Masala.
6️⃣ The Finish: Turn off the heat and fold in the Greek yogurt for that creamy texture without the extra calories.
