There are many techniques and styles that are very middle eastern and after coming to India all the spices found their way into Parsi recipe books. , the food way. Parsi da Dhaba is a mile stone in Parsi cuisine, following strict recipes kept within the ‘very fond of cooking and eating’ family. The endeavor has been, that when you eat our food you feel you are in our home with us, sharing laughter, love and great food. Why the name Parsi da Dhaba? It is unusual and quirky. Dhaba's first came up along highways and up North, on the Grand Trunk Road courageous happy Sardars made them famous. We believe that in every Parsi there is a little bit of a sardar and as the renowned Chef of ITC Sheraton once said, fancy walls and opulent furniture have nothing to do with great food. We believe it is in home kitchens & the dhaba's where great recipes are born.

Vintage Sandwiches and Farcha Nuggets Combos

1. A tea time treat. Soft moist vintage chicken sandwiches made in a home bechamel buttery sauce, with chicken nuggets. Now that’s a very Parsi high tea.

2. Vintage mutton sandwiches at Parsi da Dhaba is made with tender loveing care & tender lamb, cooked in a vintage brown sauce & shredded, coddled between two soft white slices of fresh buttered bread, a cup of tea or coffee, and a few Farcha nuggets, now that is an early evening snack to enjoy.

A picnic, a road trip or train journey, we always had mom's picnic basket made of polished cane & in it were a treasure trove of snacks, sandwiches & rolls, lovingly wrapped in butter paper or silver foil. One of the favorites was the omelette roll, often made simply with ginger garlic paste, salt & pepper, then rolled in a soft thin roti, mine always had tomato ketchup in it & was marked seperately for me with the word baba.
But as I grew up & the horizon on my taste buds expanded & I got pocket money to eat out, I discovered an omelette stuffed with cheese & chicken & I was in love. So when we were working on our Parsi da Dhaba menu the Chicken Cheese Omelette foot long roll was born. Stuffed with chicken cooked the way my mom did, a sliced green chilli, some special seasoning & cheese, & adu salan.
When I order it home, I add another couple of slices of cheese on top & heat it, just enough to melt the cheese on top & the ones inside & heat the roll.
The roll has such a outdoorsy vibe, it's uncomplicated satisfying & rustic. Like having breakfast in a bawaji's bunglow somewhere out in the country. The caramelized burns on the roti, hit your nose, a warm wood fire comes to mind, the soft omelette & rich cheese gentle & comforting, the green chillies hit the spot, the ginger & garlic barely perceptible but bring it all together like a band conductor in a symphony orchestra played in the woods. Yummy music.
