Italian style focaccia sandwich! 🍞 🍅🌿🧀
This sandwich is so simple and good, it’ll have you wanting more after every bite. It uses fresh ingredients that have been elevated using simple techniques, and the flavours together really make it taste luxurious. It’s a great example of several pantry ingredients being transformed into different textures that play great together. You can replace the basil in the pesto with spinach or mint and make your own style of pesto, or use the cheese that you like best. This is a mix and match game, use the flavours you like best and this will taste amazing!
Sandwich Toppings 🥪⬇️
• 🍞 Focaccia bread: We used homemade (check previous post for the recipe).
• 🧄 Confit garlic: Place garlic in a bowl, cover with oil, wrap in foil, and air fry/bake at 160°C for 60 minutes until golden and soft like butter. Use leftover garlic oil in other recipes like garlic bread or pasta.
• 🧀 Cheese: Use any soft cheese of your choice such as cream cheese, mascarpone, burrata or ricotta.
• 🍅 Roasted tomatoes: Toss 3-4 quartered tomatoes in olive oil, salt, and pepper. Air fry/bake at 160°C for 60 minutes until jammy.
• 🌿 Pesto: Blend 1 cup blanched basil, 1 tbsp toasted pine nuts or walnuts, 2 tbsp confit garlic, 2 tbsp cheese (Parmesan works best), salt, pepper, 1 tsp chilli flakes, 1 tsp lemon juice, and 4 tbsp olive oil until smooth.
• 🍯 Hot honey: Use store-bought or heat 1-2 tbsp honey with ½ packet chilli flakes in the microwave for 20-60 seconds.
• 🧂Salt and pepper to taste
