Some dishes are not born out of recipesâ€Ļ they are born out of memories, changing taste buds, and people who unknowingly shape the way we eat 💛đŸŒļī¸

This particular dish has a very special story behind it.

The soul of it lies in a Maharashtrian-style thecha marination, while the base ingredient is something very simple — paneer. The rest? Honestly, very ordinary ingredients. Nothing luxurious, nothing fancy. But somehow, when everything came together, it turned into a complete explosion of flavours ✨

Back in my college days, I had a few close friends from Sikkim, Nepal, and Manipur. Being around them introduced me to so many different styles of cooking and eating. Interestingly, many ingredients or dishes that never excited me while growing up tasted completely different when they prepared them in their own way.

That was probably the time I slowly discovered something about myself — I enjoy bold, fried, crispy flavours far more than traditional curries 😄

And there was one thing all of them had in common — an unbelievable love for spicy food đŸŒļī¸
My spice tolerance was nowhere close to theirs back then. But over time, meal after meal, hostel snacks, shared plates, late evening cravingsâ€Ļ my taste buds quietly changed along with those memories.

Later, one of my dearest office colleagues Nu Changkiri made that habit even worse — or better 🤭
At one point, every single meal of mine needed an extra spicy pickle on the side.

Maybe that’s why this dish feels so personal to me.
