Crispy & Flavourful Kothimbir Vadi Recipe | Easy Tea-Time Snack

Kothimbir Vadi is a delicious and flavourful snack made with fresh coriander and aromatic spices. This easy Kothimbir Vadi recipe is steamed and then shallow-fried or deep-fried until golden and crispy on the outside while remaining soft and flavourful inside.

Packed with flavour, this crispy Kothimbir Vadi makes a perfect tea-time snack or evening appetiser. Serve it hot with your favourite chutney or a cup of tea.

INGREDIENTS

Fresh coriander leaves – 4 cups (washed, dried, and chopped)

Masalas
Carom seeds (ajwain) – ½ tbsp
White sesame seeds (til) – 2 tbsp
Asafoetida (hing) – ¼ tsp
Turmeric powder – ½ tbsp
Red chilli powder – ½ tbsp
Cumin powder – ½ tbsp
Dry coriander powder – 1 tbsp
Crushed garlic and green chillies
Small garlic cloves – 25 to 30
Green chillies – 2 (less spicy)
Salt – to taste

Other Ingredients
Gram flour (besan) – 1½ cups
Rice flour – ½ cup
Water – 3 to 4 tbsp
Oil – for deep-frying

METHOD/PREPARATION

Step 1: Mixing the Masalas with the Coriander
Mix all the above-mentioned masalas with the freshly chopped coriander leaves. Mix the ingredients well to ensure that the flavours are evenly distributed throughout the mixture. The coriander leaves will start releasing some moisture.

Step 2: Making the Kothimbir Vadi Dough
Add the besan and rice flour to the coriander mixture and mix well. Add very little water at a time and knead to form a tight dough. Do not make the dough too soft, as the coriander leaves will release moisture.

Add ½ tbsp of oil and knead for a few minutes.

Divide the dough into two equal portions and shape each portion into a roll. Lightly coat the rolls with the remaining sesame seeds. Allow the rolls to rest for some time.

Step 3: Steaming
Place the rolls in a steamer and steam for 15 to 20 minutes over medium heat.

Insert a toothpick into the centre of the kothimbir vadi. If the toothpick comes out clean, the vadi is properly steamed.

After steaming, allow the rolls to cool completely. Cut them into round slices.

Step 4: Frying
You can shallow-fry or deep-fry the slices until they are golden brown and crispy on the outside, according to your preference.

SERVING
Enjoy crispy and delicious kothimbir vadi with your evening tea.

Goan-Style Chanyachi Usal | Authentic White Peas (Vatana) Recipe ​⁠

Chanyachi Usal is a traditional and flavorful Goan-style dish made with white peas (vatana). This simple homemade recipe is packed with authentic flavours and tastes delicious with hot, soft puris. It is made without onion or garlic, making it suitable for those who avoid onion and garlic during fasting.

Ingredients

• White peas / Vatana – 1 cup (washed and
soaked overnight)
• Water – as needed
• Salt – to taste
• Green chillies – 3
• Turmeric powder – ¼ tsp

Ground Masala Paste
• Oil – 2 tbsp
• Black peppercorns – 5–6
• Grated coconut – 1 cup
• Goan garam masala – 1½ tbsp
• Turmeric powder – ¼ tsp
• Water – as needed
• Grated jaggery – ¼ cup (adjust according
to taste)

Tadka
• Oil – 2 tbsp
• Hing / asafoetida – ¼ tsp
• Mustard seeds – 1 tbsp
• Curry leaves – as needed
• Fresh coriander leaves – chopped

Method / Preparation

Step 1: Pressure-cook the soaked white peas.
Transfer the soaked white peas to a pressure cooker. Add the required amount of water, salt to taste, turmeric powder, and green chillies. Pressure-cook for 2–3 whistles.

Step 2: Prepare the ground masala paste.
Heat 2 tbsp of oil in a pan. Add the black peppercorns and roast for some time. Then, add the grated coconut and roast on low heat until aromatic.

Allow the mixture to cool completely. Transfer the roasted coconut to a mixer-grinder jar. Add the Goan garam masala and turmeric powder. Add the required amount of water and grind to a medium-smooth to coarse paste.

Step 3: Prepare the usal
Transfer the ground masala paste to the pressure-cooked vatana. Add a little water to the mixer jar to remove any remaining masala paste, but do not add too much water.

Stir well and cook until most of the water evaporates. Stir occasionally while cooking.
Once about 80% of the water has evaporated, add the grated jaggery and stir well until the jaggery melts completely. Adjust the salt to taste and mix well. Cook until all the excess water evaporates and the usal becomes fairly dry.

Step 4: Prepare the tadka
Heat the oil in a small pan. Add the mustard seeds and allow them to crackle. Then, add the hing and curry leaves and prepare the tadka.
Switch off the heat and pour the tadka over the usal. Add the chopped fresh coriander leaves and mix well.

Cover the usal and let it rest for a few minutes to allow the flavours of the tadka to blend into the usal.

Serving
Serve Chanyachi Usal hot with soft, freshly prepared puris.

Goan Alsande Ros | Authentic Red Cowpea Tonak | Shravan Special ​⁠

Goan Alsande Ross is a traditional Shravan special Goan tonak made with nutritious red cowpeas (alsande), fresh vegetables, grated coconut, and aromatic Goan garam masala. This flavorful, comforting curry is perfect for a wholesome Goan vegetarian meal and pairs beautifully with steamed rice, chapati, bread, or puri.

Ingredients

Alsande / red cowpeas
• Alsande / red cowpeas – 1 cup, washed and
soaked overnight

Vegetables (you can also add any desired
vegetables or skip them if you don’t like them)
• Cauliflower – ½ cup, cut into medium
pieces
• Carrot – 1 medium, cut into medium pieces
• Pumpkin – ¼ cup, cut into medium pieces
• Sweet corn – 4 pieces

For the Masala Gravy Paste
• Oil – 2 tbsp
• Garlic cloves – 6–7
• Chopped onion – 1 large
• Chopped tomato – 1 medium
• Green chilli – 1
• Curry leaves – a few
• Grated coconut – 1 cup
• Fresh coriander leaves – a handful
• Turmeric powder – ½ tbsp
• Goan garam masala – 2 tbsp
• Water – as required

For the Tadka
• Oil – 2–3 tbsp
• Chopped garlic – 1 tbsp
• Chopped onion – 1 large
• Fresh coriander leaves – a handful
• Curry leaves – a few
• Chopped tomato – 1 medium

Other Ingredients
• Salt – to taste
• Water – as required
• Chopped fresh coriander leaves – for
garnish

Method / Preparation

Step 1: Pressure-Cook the Alsande / Red Cowpeas
Thoroughly wash the alsande and soak them overnight. The next day, drain the soaking water and add fresh water to the alsande. Transfer them to a pressure cooker, add water as required, and season with salt to taste. Pressure-cook for 2 whistles.

Step 2: Prepare the Masala Gravy Paste
Heat oil in a pan and add the garlic cloves and onion. Sauté until the onion becomes translucent and lightly golden.

Add the tomato, green chilli, curry leaves, and grated coconut. Roast until aromatic and lightly golden. Add the fresh coriander leaves and roast for some time.

Add the turmeric powder and Goan garam masala powder and roast for 2 minutes over low heat. Switch off the heat and allow the mixture to cool completely.

Transfer the mixture to a grinder jar, add water as required, and grind to a medium-fine paste. The masala gravy paste is ready.

Step 3: Prepare the Tadka
Heat oil in a pan. Add the chopped garlic, onion, fresh coriander leaves, and curry leaves. Sauté until the onion becomes translucent and lightly golden.

Add the chopped tomato and sauté until it becomes soft. Add all the cut vegetables and sauté for 5–6 minutes over low heat.

Cover and simmer for 10–15 minutes, stirring occasionally.

Step 4: Prepare the Ross
Add the ground masala paste to the tadka and add water as required to adjust the consistency of the gravy. Stir well. Cover and cook until the vegetables are almost cooked, stirring occasionally.

Once the gravy becomes thick and the vegetables are about 80% cooked, add the pressure-cooked alsande / red cowpeas and salt to taste. Mix well and cook for another 5 minutes over low heat.

Once the ross becomes slightly thick, switch off the flame. Add finely chopped fresh coriander leaves, stir well, and serve hot.

Serving Suggestion
Serve delicious Goan Alsande Ross with steamed rice, chapati, bread, or puri.

Goan Lemon Pickle Recipe | Sweet & Spicy Limbache Lonche | No Preservatives ​⁠

Ingredients

For the Lemon Marinate
15 lemons
Salt, to taste (or 1 tbsp for marination)
½ tbsp turmeric powder

For the Tadka
¼ cup oil
2 tbsp mustard seeds
¼ tsp fenugreek seeds
¼ tsp asafoetida (hing)
1 cup grated jaggery
1 tbsp red chilli powder
1 tbsp Kashmiri chilli powder
Salt, to taste

Method

Step 1: Marinate the Lemons
Wash the lemons thoroughly and dry each one with a clean cotton cloth.
Steam the lemons over medium heat for 10–15 minutes.
Check if they are done by inserting a toothpick. If it slides in easily, the lemons are perfectly steamed.
Transfer the lemons to a plate or bowl and allow them to cool completely.
Cut each large lemon into 4 pieces and each small lemon into 2 pieces.
Remove all the seeds from the lemon pieces.
Strain the released lemon juice into a bowl and discard the seeds.
Transfer the lemon pieces and the strained juice to a large mixing bowl.
Add 1 tbsp salt and ½ tbsp turmeric powder. Mix well.
Cover and let the lemons marinate for 48 hours, stirring every 6 hours.

After 48 hours, the marinated lemons are ready for making the pickle.

Step 2: Prepare the Pickle
Heat the oil in a kadhai over medium heat.
Add the mustard seeds, fenugreek seeds, and asafoetida (hing). Allow the spices to crackle.
Add the grated jaggery and cook over low heat, stirring continuously until it melts completely.
Add the red chilli powder and Kashmiri chilli powder. Mix well until the spices are evenly combined with the jaggery.
Add the marinated lemon pieces along with any remaining marinade. Mix well. Cover and cook over low heat for 10–15 minutes, stirring occasionally.
Add salt to taste and mix well. Continue cooking over low heat for another 5 minutes, or until the pickle thickens and the colour deepens slightly.
Turn off the heat and allow the pickle to cool completely.

Step 3: Storage
Transfer the cooled pickle to a clean, dry, airtight glass jar. Store it in a cool, dry place. Always use a clean, dry spoon when serving to help extend its shelf life.
