The infamous black bun, is a potato brioche bun-bread made using baked potato as one of the main ingredient. The black colour is imparted from edible charcoal powder.

The chicken patty is made from fresh minced chicken and selected spice mix.

Since finding fresh lettuce is challenging on Havelock island, we at Narra assemble our burgers with water spinach. Native to mostly Eastern India, ‘Water Spinach’ gives a crunchy texture similar to lettuce.

A distinctive flavour addition to our burger, the caramelized onions! A slight sweet taste of the onions, blends well with the rest of the elements.

Have you heard chefs say “The way you cut the veggies matter, the flavour changes when they’re cut to different shapes and sizes.”

It’s is true, here’s a little bit into that statement -

Chopping or mincing breaks open plant cell walls which releases internal water, sugars, and aromatic oils. Smaller or thinner cuts create less surface area, this helps the veggies caramelise quicker and allows the vegetables to absorb the dressing and sauces.
