Chicken Karaage is a popular Japanese dish made with tender bite-sized chicken thighs marinated in soy sauce, ginger, and garlic, then coated in corn starch which is then deep-fried until you can crunch and munch into it.

The key to this crunchy texture is double-frying—first at a slight low temperature to cook through, then at a much higher temperature for a crisp, golden finish.

This dish is paired with miso mayo, a small salad of radish,carrot and cabbage juliennes and togarashi powder.
