FARM UPDATE (16th July) ๐Ÿ‘จโ€๐ŸŒพโ˜€๏ธ

Sowed nachani (finger millet) seeds today for nursery preparation on our farm. Just like rice, we have found that nursery prepaparation (preparing saplings in a small area and then transplanting into the field) works out well for nachaani too, especially for our organic farm. As a grass, it is very difficult to remove weeds from plots of nachani as many wild grasses looks similar to it. By letting the nachani saplings grow densely in a small patch till they reach a certain size, and then transplanting into the field, we can directly clear the field of wild grasses again right before transplanting nachani saplings into it. Any new wild grasses that grow after transplanting will be a different size than the already bigger nachani and thus easily distinguishable.

And for suggesting we mix the soaked seeds with vericmompost to make sowing them easy, as plain soaked seeds tend to clump together and stick to our hands ๐Ÿ˜ (the nachani was soaked overnight to hasten the germination)

Behind the Scenes of our very first Masala Blend - The Perfect Chai Masala ๐Ÿ˜โ˜•๏ธ

Funny story actually, the idea came from one of our lovely local community members who had been buying whole spices and Ing Makhir ginger from us. He felt we had all the right ingredients for a really nice chai masala and nudged us to try it. So we did, in 2023, just as a fun little experiment.

Two years down the line, somehow that one experiment turned into an entire range of natural masalas! All because of the love and encouragement so many of you have given us along the way! ๐Ÿ™‹๐Ÿปโ€โ™‚๏ธโค๏ธ

Big credit also to all our farmer friends who organically-grow the ingredients for all our blends. When the spices are this fresh and fragrant, the masala really does speak for itself. ๐Ÿ™

Just found out today is International Plastic Bag Free day! Being in the processed food industry, we see firsthand how dependent we are on single-use plastics. They definitely have their advantages, theyโ€™re waterproof, durable, lightweight, and cheap. But we know all too well that the cheap monetary cost is possible only due to the hidden costs it puts on our environment.

Step by step we are trying to transition as many of our products away from single use plastics as we can. As a pilot run we have been testing paper bags for our whole spices at our in person natural food groups and farmers markets in Pune. Itโ€™s a bit of a challenge in the rainy season as the paper bag can get soggy, but overall the response has been great (especially for Dhaniya and Jeera!) For anyone else wanting to try this for their own products, our observations in the past few weeks have been -

- When given an option between our regular sealed packs or paper bags people have overwhelmingly been choosing the paper bag. Most people have empty bottles and dabbas at home and they just transfer the spices into those, so the paper not being airtight and waterproof isnโ€™t a big concern for them.
- Make sure you chose a paper bag with sufficient thickness, so that it doesnโ€™t tear or get punctured by other items when buyers put it in their bags.
- In terms of money and time, there hasnโ€™t been any significant change for us (so if you are reluctant to transition away from plastic due to those factors, paper bags can be a feasible alternative for you) We fill many paper bags at home the night before, and use a piece of paper tape (so that itโ€™s still compostable) to close the paper bag so that it stays intact during transport.
- This packaging is only practical for our whole spices, which can tolerate some exposure to humidity. Our masala blends unfortunately cannot work in these paper bags because 1. The powder will spill out if the bag moves around, even if the top is folded and taped and 2. The masala powder has a low tolerance to humidity and can cake up and go stale sooner once it absorbs moisture. If you have any ideas on sustainable packaging for those please do let us know! ๐Ÿ’š

With inspiration and encouragement from admins and members of our local farmer groups, weโ€™ve really been going all in on finding sustainable packaging alternatives! While a full transition to plastic-free packaging for our online orders will take some more R&D (since it has to be airtight and waterproof to prevent spoilage), we did a trial run of a few in-person alternatives at one of our weekend groups today. โ™ป๏ธ๐ŸŒŽ

Most notably, we did a trial run of a โ€˜bring your own containerโ€™ system for the fresh jeera harvest we recently received from our partner farmer in Jaisalmer. Since itโ€™s just the two of us, it did lead to a bit of chaos between handling our stall, distributing the preorders, and filling the containers with jeera in the trunk of our car. But we were really supported by the patience and help of the group members, who were as eager as us to seed this trial run succeed and allow us to transition to a more sustainable distribution of our products!

Over the next few weeks we will be carrying out more trial runs in our other groups, but we know the members of those groups will be just as supportive, so weโ€™re optimistic that weโ€™ll find our footing with this new method soon!! โ™ป๏ธ๐Ÿ˜๐Ÿ’ช

The big brands in supermarkets could never tell you how their spices were grown. In fact, their spices pass through the hands of so many wholesalers and middlemen that by the time it reaches them, even they donโ€™t know where and how it was grown. ๐Ÿ˜…

In an era where dangerous adulteration, pesticide residues, carcinogen exposure, etc. is so prevalent to cut costs, this is a risk you should NOT be taking. On the other hand, community food systems like ours offer transparency and an opportunity to know the farmers who grow the food you eat. When you can know who grew your food, what their values are, and what farming practices they follow, you can make a more informed decision for your and your familyโ€™s health - something that is impossible when buying based on famous brand names, multi-crore advertising campaigns, or biggest discounts!!

Being a small-scale business - and farmers ourselves - we are able to offer you clarity about how our spices were grown and masalas were made, and we intend to continue offering this reliability to best serve our communityโ€™s needs. ๐Ÿ˜Š๐Ÿ™

Another Step Towards Sustainability! ๐ŸŒŽโ™ป๏ธ

Those of you who have been following us for a while know that weโ€™re always striving to improve the environmental sustainability of our brand - be it through the glass masala bottles with compostable paper stickers, using recycled bags and boxes for order deliveries, creating compostable Diwali gift boxes, and more!

Our latest idea is to try and transition some of our products off of single-use stickers and instead use stamps! With the addition of being reusable and less wasteful, it also adds a unique rustic look to our packaging (at least in my opinion!)

For those of you visiting us at our local natural farming groups, you can look forward to seeing these stamps on most of our whole spice packets the next time you meet us! ๐Ÿ˜๐Ÿ™Œ

(We have also been trying to transition to completely compostable packaging, but have been struggling to find one that is sturdy and does not tear/open easily - otherwise transport becomes an issue! If you have any leads for that please do let us know ๐Ÿ™)

We understand the struggles of gluten allergies/celiac disease all too well, being a gluten-free household ourselves. Even an unassuming ingredient like hing (asafetida) is generally laced with wheat flour as an anticaking agent, making it unsafe for those with gluten sensitivities! ๐Ÿ‘Ž

Thatโ€™s why we ensure our masalas are processed in a gluten-free facility, and our Sambar Masala and Idli Podi - traditionally made using hing - have been developed using modified traditional recipes that provide the same complexity of flavor without the potential gluten contamination from ingredients like hing!

We are pleased to offer a safe masala option for many of our customers who are celiac patients or have wheat allergies (including our own mother!), so that they can enjoy delicious restaurant-style food without risking health issues ๐Ÿ˜๐Ÿ™

Whatโ€™s the ONLY upside to this terrible heatwave? ๐Ÿฅตโ˜€๏ธ

Itโ€™s the perfect weather to roast spices in our solar cooker ๐Ÿ˜‚

Weโ€™ve been making the most of this abundance of sunlight to roast various ingredients for our masala blends. Itโ€™s not only more sustainable but also allows us to spend less time near the stove, which is a lifesaver in the current heat.

Additionally, it brings out a more robust flavor from spices like coriander and bay, because it roasts them without any charring that could add bitterness to the masala. For other spices, like black cardamom and star anise, while the solar cooker alone is not enough to fully bring out their flavor, it drastically reduces the time it needs on the stove by removing the moisture from them.

In the meanwhile, unlike our spices, please donโ€™t roast yourselves in the sun and try to stay indoors, cool, and hydrated through this heatwave!
