Watch how long it takes to whip air into chocolate — most people rush this part.

Folding air into melted chocolate isn't a five-minute job. Too fast and you knock the air right back out — dense, flat, no lift. Too slow and the chocolate sets before it's fully aerated. We go by feel, not a timer: the mixture has to hold a ribbon on the surface before it's ready.

It's the difference between a mousse that's actually light and one that just looks like mousse in a cup.

This is the standard every batch gets held to — which is also why we only take a limited number of orders a day.

Mousse cups are back in rotation this week. DM us "MOUSSE" to reserve your slot before they're gone.

I cook the hazelnut praline slow — right to the edge of bitter, before it turns.

Then I let it sit as its own layer, between two rounds of dark chocolate sponge that don't back down from it.

The ganache on top isn't the star. It's there to pull the sweetness back down.
