RECIPE - Smoked Pork Stew 🥘

Ingredients:
Smoked pork, fermented bambooshoot, smoked bhoot jolokia, sichuan peppercorns (mejenga guti), dry red chilies, ginger and garlic (freshly crushed or sliced) and salt.
Directions:
• Roast mejenga guti in a pan and then grind it with mortar and pestle.
• Soak dry red chilies in hot water for 10 minutes. Grind into a coarse paste with a little water or crush with mortar and pestle.
• Cut the smoked pork into bite-sized pieces.
• Place in a deep pot or traditional cooking vessel.
• Add the crushed garlic, ginger, and chili paste.
• Stir in the fermented bamboo shoots, smoked bhoot jolokia and mejenga guti.
• Mix well so the ingredients are evenly
• Add enough water to cover the pork.
• Cover and simmer on medium-low heat for 45-60 minutes, or until the pork becomes tender and the fat is rendered.
• Add salt to taste once the pork is nearly done.
• Let the dish cook uncovered for a few more minutes to thicken slightly.
Serve hot with plain steamed rice or sticky rice.
